Odyssée is crafted from carefully selected vineyards in France, with sites chosen for their well-drained soils and favorable exposures that promote slow, even ripening. The focus is on healthy, expressive fruit, often from sustainably or organically farmed parcels, harvested at optimal maturity to preserve both freshness and depth. In the cellar, the philosophy is one of gentle intervention: grapes are sorted meticulously, fermentation is conducted in temperature-controlled vessels to preserve aromatics, and extraction is managed with a light hand to emphasize finesse over power. Aging typically takes place in a combination of inert vessels and used oak, allowing the wine to gain texture and harmony without being dominated by wood.

This red is a versatile partner at the table, pairing beautifully with roasted lamb, grilled steaks, duck breast, and hearty dishes such as cassoulet or slow-braised beef. It also works well with Mediterranean-inspired cuisine—herb-crusted pork, ratatouille, grilled vegetables, or aged hard cheeses like Comté and Manchego.
