This vintage captures the essence of Bin 707 with its vibrant black fruit core, immaculate structure and luxurious depth, standing firmly in the lineage of Penfolds’ most collectible reds.

Tasting Notes
In the glass, the 2021 Bin 707 is deeply coloured—an opaque, inky crimson with a vibrant purple rim that hints at its youth and concentration. The nose opens with a classic Cabernet profile of blackcurrant and cassis, layered with mulberry, ripe fig and blackberry, supported by notes of cedar, dark chocolate, graphite and a subtle lift of mint and dried herbs. Well-integrated, high-quality oak adds tones of vanilla pod, espresso and sweet spice without overwhelming the fruit. On the palate the wine is full-bodied, powerful and immaculately composed. Plush flavours of fresh mulberry, blackcurrant and dark plum are interwoven with fig, cocoa, clove and a touch of tobacco leaf. The tannins are firm, fine-grained and glossy, framing the fruit rather than dominating it, while a bright line of acidity keeps everything focused and long. The finish is persistent, savoury and mineral-tinged, suggesting outstanding aging potential. Well-cellared, this 2021 Bin 707 should evolve beautifully over 15–25 years, gradually revealing more savoury complexity, cigar-box nuances and silky textural refinement.

Production
Bin 707 is drawn from prime Cabernet parcels across South Australia, with Barossa Valley at its core and contributions often coming from other premium warm-to-moderate sites that deliver depth, structure and ripe, graphite-like tannins. These vineyards typically sit on a mix of ancient, well-drained soils—ranging from red-brown loams over clay to sandy and gravelly patches—that naturally limit yields and concentrate flavour. Grapes are harvested parcel by parcel at optimal ripeness, with careful hand and selective machine picking to preserve pristine fruit. In the winery, lots are fermented separately in temperature-controlled vessels to capture varietal purity and regional character, followed by extended maceration where appropriate to build structure. The finest components are then selected and matured in a high proportion of new oak—traditionally American, in the grand Penfolds style—to create a bold, cellar-worthy Cabernet that mirrors the stature and philosophy of Grange.

Food & Serving
This is a commanding Cabernet that shines alongside richly flavoured, protein-driven dishes. Think dry-aged ribeye with a peppercorn crust, slow-roasted lamb shoulder with rosemary and garlic, braised short ribs, or venison with a red wine and juniper jus. It also pairs beautifully with truffle-infused dishes, mushroom ragù, hard aged cheeses like Comté or mature cheddar, and dark chocolate with a hint of sea salt. Serve at 16–18°C, ideally after 1–2 hours in a decanter in its youth to allow the wine to open and soften. As it gains bottle age (10+ years), shorter decanting times of 30–60 minutes will be sufficient to reveal its layered complexity.

Founded in 1844 by Dr. Christopher Rawson Penfold and his wife Mary on Magill Estate near Adelaide, Penfolds is Australia’s oldest and most iconic winery, its story mirroring the rise of the country’s fine wine culture.
