Production
Bin 707 is drawn from prime Cabernet parcels across South Australia, with Barossa Valley at its core and contributions often coming from other premium warm-to-moderate sites that deliver depth, structure and ripe, graphite-like tannins. These vineyards typically sit on a mix of ancient, well-drained soils—ranging from red-brown loams over clay to sandy and gravelly patches—that naturally limit yields and concentrate flavour. Grapes are harvested parcel by parcel at optimal ripeness, with careful hand and selective machine picking to preserve pristine fruit. In the winery, lots are fermented separately in temperature-controlled vessels to capture varietal purity and regional character, followed by extended maceration where appropriate to build structure. The finest components are then selected and matured in a high proportion of new oak—traditionally American, in the grand Penfolds style—to create a bold, cellar-worthy Cabernet that mirrors the stature and philosophy of Grange.

Think dry-aged ribeye with a peppercorn crust, slow-roasted lamb shoulder with rosemary and garlic, braised short ribs, or venison with a red wine and juniper jus. It also pairs beautifully with truffle-infused dishes, mushroom ragù, hard aged cheeses like Comté or mature cheddar, and dark chocolate with a hint of sea salt. Serve at 16–18°C, ideally after 1–2 hours in a decanter in its youth to allow the wine to open and soften.
