Tasting Notes
In the glass, the 2021 Seven Flags Pinot Noir shows a luminous medium ruby hue with a translucent rim, hinting at both delicacy and concentration. The nose is layered and refined, opening with wild strawberries, red cherries and cranberries, followed by notes of rose petals, dried herbs, and a subtle forest-floor earthiness. Hints of baking spice, clove, and finely integrated oak toast sit in the background rather than dominating. On the palate, the wine is pure and finely textured, with a silky, almost weightless mouthfeel supported by a vibrant line of acidity. Flavours of red cherry, pomegranate, and raspberry are interwoven with savoury notes of tea leaf, mushroom, and gentle spice. Tannins are ultra-fine and chalky, giving the wine shape without heaviness, and the finish is long, focused and mineral-driven, leaving a lingering impression of red fruit and subtle oak. While already beautifully expressive in its youth, the structure and balance suggest excellent aging potential: it should evolve gracefully for 8–12 years from vintage, developing more complexity and tertiary nuances with time in bottle.

Paul Cluver’s Seven Flags Pinot Noir is sourced from the estate’s best-performing Pinot parcels in the cool, elevated Elgin appellation, one of South Africa’s most acclaimed regions for this variety. The vineyards benefit from maritime influences, diverse decomposed shale and clay-rich soils, and significant diurnal temperature swings, all of which contribute to slow, even ripening and superb flavour development. Grapes are typically hand-harvested at optimal ripeness, with meticulous sorting in the vineyard and at the cellar to ensure only pristine fruit is used. Fermentation is usually carried out in small open-top fermenters with a high proportion of whole berries and a judicious use of whole clusters, allowing for gentle extraction and aromatic complexity. The wine is then aged in French oak barrels, with a portion of new oak, for an extended period to refine texture and build depth, while preserving the finesse and purity that define Seven Flags.

This Pinot Noir’s elegance and savoury depth make it a versatile partner at the table. It pairs beautifully with roast duck, herb-crusted lamb, mushroom risotto, seared tuna, or dishes featuring truffles and wild mushrooms. It also works wonderfully with lighter game birds, charcuterie, and soft to semi-hard cheeses such as Brie, Taleggio or mild Comté. Serve at 14–16°C (57–61°F) to highlight its aromatics and freshness. A gentle decant of 30–60 minutes is recommended in its youth to allow the wine to open up; older bottles may simply be poured carefully to avoid disturbing any sediment.
