Tasting Notes
In the glass, this Bonnes-Mares shows a deep, shimmering ruby hue with garnet reflections at the rim, hinting at both concentration and finesse. The nose is complex and layered: wild red and black cherries, crushed raspberries and blackcurrant intertwine with violets, rose petals, and a fine thread of forest floor. Subtle oak tones bring nuances of cedar, sweet spice, and a touch of cocoa, all wrapped in a cool, mineral edge. On the palate, the wine is precise and structured, with vibrant acidity and firm, finely grained tannins that echo Bonnes-Mares’ reputation for power. Flavors of ripe cherry, wild strawberry and blackberry are supported by notes of black tea, earth, and a distinct stony, almost chalky minerality. The finish is long, savory and persistent, suggesting this Grand Cru is just at the beginning of its evolution. Production
This Bonnes-Mares Grand Cru is sourced from one of Burgundy’s most storied terroirs, straddling the boundary between Chambolle-Musigny and Morey-Saint-Denis. The vineyard’s patchwork of clay-limestone and rocky, marl-rich soils produces wines that marry floral elegance with a firm, muscular structure. Yields are deliberately kept low and the grapes are harvested by hand, with rigorous sorting in the vineyard and at the cellar door to retain only the healthiest bunches. Vinification follows a Burgundian artisanal approach: gentle handling of the fruit, a careful balance of whole-cluster and destemmed grapes depending on the vintage character, and a cool maceration to draw out aromatics and fine tannins. Fermentation takes place in small vats with indigenous yeasts, followed by aging in French oak barrels (a portion new) to add subtle spice and structure without overwhelming the terroir expression.

The 2021 Millemann Bonnes-Mares Grand Cru is a natural partner for refined dishes that can stand up to its depth and structure. Think roast duck with cherries, côte de veau with morels, pigeon or quail, or a classic beef tenderloin with truffle jus. It also pairs beautifully with game birds, mushroom-based dishes, and aged hard cheeses like Comté or aged Gouda. Serve at 15–17°C (59–62°F) to highlight its aromatic complexity and freshness. For current drinking, decant 1–2 hours before serving to allow the wine to unfurl; more mature bottles will need a gentler, shorter decant mainly to remove any sediment.
