Logodaj Winery sources the fruit for Nobile Rubin from vineyards in Bulgaria’s warm Struma Valley, a region framed by mountains and strongly influenced by a sunny, almost Mediterranean climate. The stony, well‑drained soils and significant diurnal temperature swings help the Rubin grape achieve both ripeness and aromatic intensity while preserving acidity. Grapes are typically harvested by hand to ensure optimal selection of bunches. In the cellar, the wine is fermented in temperature‑controlled stainless steel to capture pure fruit character, followed by maturation—often in a combination of stainless steel and oak barrels—to build texture, integrate tannins and add subtle spice without overwhelming the grape’s natural personality.
