2021 L'Aventure Winery Estate Optimus Proprietary Red is a bold yet refined Paso Robles blend that marries French savoir-faire with Californian freedom. Crafted by Bordeaux-trained winemaker Stephan Asseo, this wine showcases the power of Syrah, the structure of Cabernet Sauvignon, and the depth of Petit Verdot in one seamless, terroir-driven expression. Named as a subtle homage to Napa icons Opus One and Dominus, Optimus embodies the “best possible” direction that led Asseo to the limestone-rich hills of Paso Robles.
Tasting Notes
In the glass, the 2021 Optimus shows a vibrant medium ruby-purple hue, hinting at both concentration and freshness. The nose is immediately inviting, with pure aromas of red and black berries—think blackcurrant, blackberry and ripe plum—layered with notes of forest floor, dried leaves and warm baking spices. Subtle hints of violets, graphite, and a touch of vanilla from French oak add complexity without dominating the fruit.
On the palate, this is medium to full-bodied, polished and beautifully balanced. Grainy, fine-grained tannins frame flavors of black cherry, cassis and juicy boysenberry, supported by savory undertones of cocoa, licorice, cracked pepper and a gentle earthiness. A lifted floral perfume carries through on the mid-palate, leading into a long, persistent finish that is both fresh and structured. While already approachable in its youth, the wine’s concentration, acidity and tannin structure give it excellent aging potential; it should evolve gracefully for 10+ years, gaining further complexity, softness and nuance with time in bottle.
Production
The fruit for Optimus is sourced from L'Aventure’s estate vineyards in the Willow Creek District of Paso Robles, an area prized for its rolling hills, rocky soils, and high proportion of calcareous limestone. This combination of stony topsoil and chalky subsoil delivers excellent drainage and naturally low yields, intensifying flavor and structure in Syrah, Cabernet Sauvignon, and Petit Verdot. Harvest is carried out with meticulous attention to ripeness—guided by phenolic maturity rather than simply sugar levels—to ensure ripe tannins and vibrant natural acidity. In the cellar, the varieties are vinified with a modern yet detail-oriented approach, typically fermented separately to preserve their distinct personalities before blending. The finished wine is then aged for around 16 months in a mix of new and one-year-old French oak barrels, adding texture, polish and subtle notes of spice and vanilla while keeping the focus firmly on the purity of the fruit and the character of the Paso Robles terroir.
Food & Serving
Optimus 2021 is a natural partner for richly flavored, savory dishes. Try it with grilled ribeye or lamb chops, braised short ribs, duck confit, or a slow-cooked beef stew; the wine’s structure and freshness cut through richness beautifully. It also works well with rosemary- and thyme-accented dishes, truffle-infused risottos, wild mushrooms, and aged hard cheeses such as Comté, Manchego or aged Gouda. Serve at 16–18°C (60–64°F) for optimal expression of fruit and aromatics. Decanting for 45–60 minutes is recommended in its youth to allow the wine to unfurl its floral, spicy complexity and soften the tannins, though shorter aeration will suffice after a few years of bottle age.
