Tasting Notes
In the glass, the 2021 Bonnes-Mares Grand Cru shows a luminous, deep ruby core with bright garnet reflections, hinting at both concentration and elegance. The nose is immediately captivating: fine floral notes of violets and rose petals mingle with wild red berries, black cherry, and raspberry, layered with exotic spice, delicate incense, and a stony, chalky minerality. As it opens, more complex hints of undergrowth, autumn leaves, and subtle wood smoke emerge, framed by refined, well-integrated oak. On the palate, this is both silken and structured, a hallmark of great Bonnes-Mares. The attack is pure and vibrant, with juicy red and dark berry fruit, candied cherry, and wild strawberry wrapped around a firm yet ultra-fine tannic spine. There is a pronounced minerality that drives the wine from mid-palate through to a very long, resonant finish, where nuances of rare exotic wood, sweet spices, and a faint suggestion of leather and earth linger. The 2021’s lower alcohol and bright acidity give it remarkable poise and drinkability in youth, yet the depth of fruit, refined tannins, and balance suggest excellent aging potential over 15–25 years, and likely longer in top cellars.

Production
Bonnes-Mares straddles the villages of Chambolle-Musigny and Morey-Saint-Denis, and Joseph Drouhin’s parcel lies on a gentle east-facing slope over brown, limestone-rich soils scattered with small stones and relatively low in clay. This stony terroir, combined with the cool exposures and natural air flow from the nearby combes, yields Pinot Noir of striking tension and minerality. In 2021, yields were dramatically reduced across Burgundy, resulting in particularly concentrated, small-berried fruit. The grapes for this wine are harvested by hand into small open crates, with careful sorting in the vineyard and winery. Depending on the character of the vintage, 20–50% of the harvest is vinified as whole clusters. Fermentation and maceration last around 2–3 weeks in small open-top vats, with a combination of gentle punch-downs and pump-overs, using only indigenous yeasts. After pressing in a vertical press, with press fractions kept separate and blended by taste, the wine is aged 16–20 months in French oak barrels, approximately 30% of which are new, to respect the purity of fruit and the expression of the Grand Cru terroir.

Food & Serving
This Grand Cru is best matched with refined, flavorful dishes that complement its depth and complexity: think roast pigeon or duck breast, veal with morel mushrooms, game birds, truffled poultry, or a classic beef tenderloin with a red wine reduction. It also shines alongside dishes featuring wild mushrooms, root vegetables, and richer preparations of hare or venison, as well as aged hard cheeses like Comté or Tomme. Serve at 15–16°C (59–61°F) to highlight its aromatic delicacy and structure. In its youth, a gentle decant of 1–2 hours helps the wine unfurl its floral and spicy nuances; with maturity, decant more briefly, mainly to remove any sediment and allow the bouquet to blossom.
