Tasting Notes
In the glass, the 2021 Cayas shows an intense, deep ruby colour with vivid purple highlights that hint at both youth and concentration. The nose is expressive and layered, opening with ripe red and black fruits before revealing notes of black pepper, fresh leather, violets, and finely integrated oak spices. On the palate, this is full-bodied yet poised, with a powerful but finely tuned structure. Crisp, precise tannins frame flavours of stewed red fruits, blackberries, peppercorn, and savoury herbs, supported by a subtle smokiness from barrel aging. The finish is long, lively and fresh, with a cool, mineral edge and a refined finesse that speaks of both its Alpine origin and careful élevage. With its balance of fruit, acidity and tannin, this vintage has excellent aging potential, comfortably cellaring for 8–15 years, during which it will gain complexity and secondary notes of leather, truffle and game.

Production
Cayas Syrah is sourced from carefully selected parcels around Conthey, Saillon and Fully in Valais, where vines grow on steep slopes of slate and glacial moraine. This dramatic Alpine terroir offers excellent drainage, abundant sunlight and cool nights, giving naturally low yields and grapes of great concentration and aromatic precision. The Syrah is harvested by hand at optimal ripeness to protect berry integrity and allow strict sorting in the vineyard and cellar. Vinification is geared toward elegance and depth: after fermentation, the wine is matured for 24 months in 228-litre oak barrels (barriques), allowing the spice, fruit and fine tannins to knit together into a complex, ageworthy whole without overwhelming the varietal character.

Food & Serving
This is a gastronomic Syrah that pairs beautifully with flavourful dishes such as grilled or roasted red meats, lamb with herbs, game birds, and slow-braised beef or venison. It also works superbly with aged, characterful cheeses and even dark chocolate-based dishes or bitter chocolate desserts, where its spice and freshness cut through richness. Serve at 16–18°C (60–64°F) to show its aromatic complexity. Decanting for 1–2 hours is recommended in its youth to soften the tannins and fully open the bouquet; older bottles should be decanted gently just before serving to remove any sediment.
