Grapes are harvested at optimal ripeness, often picked in the cool of the night to protect freshness and aromatic intensity. In the winery, the fruit is destemmed and fermented in stainless steel to capture pure varietal character, with regular pump-overs or punch-downs to extract color and fine tannins. The wine is then aged in oak, including a portion in French and/or American barrels, to add spice, vanilla and subtle toast while maintaining the wine’s bright, fruit-driven profile.
