Tasting Notes
In the glass, the 2021 Cerro Sur is deep ruby with a vibrant, almost electric rim—youthful and saturated, yet luminous rather than opaque. The nose opens with perfumed aromas of blackcurrant, wild blueberry, and red cherry, wrapped in layers of violet, graphite, cedar, and fresh tobacco leaf. Subtle notes of forest floor, dried herbs, and cocoa powder emerge with air, adding nuance and complexity.
On the palate, this is precise and impeccably structured, with a core of dark, cool-toned fruit—blackberry, black cherry, and plum—supported by fine-grained tannins and a lifted line of acidity that reflects its mountain origins. Flavors of crushed stone, pencil shavings, licorice, and espresso echo the nose, building into a long, polished finish that lingers with notes of spice and savory herbs. Production
Cerro Sur is typically sourced from select high-elevation vineyards on the eastern side of Napa Valley, where volcanic, rocky soils and cooler exposures naturally limit yields and concentrate flavor. These hillside sites provide excellent drainage and a long, even growing season, allowing Cabernet Franc and Cabernet Sauvignon to ripen slowly while retaining tension and aromatic lift. Grapes are harvested by hand in small lots, with meticulous sorting in the vineyard and at the winery to ensure only pristine fruit is used. Fermentation is carried out in small vessels, often with gentle pumpovers or punchdowns to carefully extract color, flavor, and tannin without harshness. The wine is then aged in French oak barrels—typically a significant portion new—allowing the structure to knit together and the aromatics to deepen, while preserving the clarity and energy that make Cerro Sur distinctive.

The 2021 Cerro Sur is a natural partner for refined, savory dishes that highlight its aromatic complexity and structure. Think herb-crusted lamb loin, dry-aged ribeye, roast duck with cherry or blackberry jus, mushroom risotto, or dishes featuring truffles and roasted root vegetables. It also works beautifully with hard cheeses such as Comté, aged Gouda, or well-aged Cheddar. Serve at 16–18°C (60–65°F) to show its full range of aromatics and texture.
