These hillside sites provide excellent drainage and a long, even growing season, allowing Cabernet Franc and Cabernet Sauvignon to ripen slowly while retaining tension and aromatic lift. Grapes are harvested by hand in small lots, with meticulous sorting in the vineyard and at the winery to ensure only pristine fruit is used. Fermentation is carried out in small vessels, often with gentle pumpovers or punchdowns to carefully extract color, flavor, and tannin without harshness. The wine is then aged in French oak barrels—typically a significant portion new—allowing the structure to knit together and the aromatics to deepen, while preserving the clarity and energy that make Cerro Sur distinctive.
