Grapes are typically harvested by hand in small lots at optimal ripeness to ensure careful selection and purity of flavor. In the cellar, the fruit is sorted again before a gentle fermentation in small tanks, with attentive extraction to build structure without harshness. The wine is then aged in French oak barrels (a significant portion new), allowing it to gain aromatic complexity, polish its tannins, and integrate oak nuances with the natural power and elegance of the Oakville fruit.
