Tasting Notes
In the glass, the 2021 Coombsville Cabernet is a deep, saturated ruby-purple, hinting at its concentration and youth. The nose opens with layered aromas of blackcurrant, black cherry, and ripe plum, framed by notes of graphite, violets, dried rose petal, and crushed stone. Subtle touches of cocoa, cedar, and baking spice emerge with air, reflecting thoughtful élevage in high-quality French oak. On the palate, this is structured yet supple, with a core of dark cassis, blackberry, and blueberry compote wrapped in finely knit tannins. Hints of espresso, tobacco leaf, and dark chocolate weave through a long, mineral-driven finish, lifted by fresh acidity that keeps the wine energetic rather than heavy. The 2021 vintage’s concentration and balance suggest excellent aging potential: it can be enjoyed now with a decant, but will reward patience over 10–15 years, and potentially up to 20 years in a well-kept cellar as the tannins resolve and the savory, tertiary nuances develop.

Production
This Cabernet Sauvignon comes from Coombsville, Napa Valley’s southeastern, cooler-climate district, known for its gently rolling hills and well-drained volcanic ash and gravelly loam soils. The cooler temperatures and bay influences allow for a longer, more measured growing season, delivering grapes with excellent phenolic ripeness, vibrant acidity, and aromatic complexity. Fruit is typically harvested by hand in small lots at optimal ripeness, with careful vineyard selection and low yields to ensure concentration and purity. In the cellar, the grapes are sorted meticulously before fermentation, often in small stainless steel or concrete vessels to preserve freshness and site expression. The wine is then aged in French oak barrels—often a mix of new and used—for well over a year, allowing texture to refine and flavors to integrate without overshadowing the vineyard character.

Food & Serving
This Coombsville Cabernet shines alongside richly flavored, protein-driven dishes: think grilled ribeye, herb-crusted lamb chops, braised short ribs, or a classic roast beef with jus. It also pairs beautifully with aged hard cheeses such as Comté, aged Gouda, or Parmigiano-Reggiano, and with earthy dishes featuring mushrooms or black truffle. For optimal enjoyment, serve at 16–18°C (60–65°F). Younger bottles (within the first 5–8 years) will benefit from 1–2 hours in a decanter to soften the tannins and open up the aromatics; older bottles may need only a gentle splash decant to separate sediment and allow the bouquet to unfold.
