From one of Pfalz’s most storied estates, the 2021 Dr. Bürklin-Wolf Wachenheimer Rechbächel Premier Cru is a laser-focused, terroir-driven dry Riesling that captures the precision and depth of this historic monopole vineyard. Sourced from a mere 3 hectares exclusively owned by the estate, it showcases the finesse of biodynamic farming and traditional cellar work in a cooler, finely etched vintage like 2021. Classified under Bürklin-Wolf’s Burgundian-inspired quality pyramid as a Premier Cru, it bridges German Riesling heritage with a distinctly Burgundy-like sense of site and structure.
Tasting Notes
In the glass, this Riesling is pale lemon with green reflections, signaling youthful freshness and vibrant acidity. The nose is immediately expressive yet refined, offering aromas of lime zest, white peach, green apple and crunchy pear, woven together with flinty minerality, crushed stone, and subtle notes of fresh herbs and lemon balm. Hints of wet slate, smoke and delicate spice add complexity as it opens.
On the palate, it is dry, taut and precise, with just 1.8 g/l of residual sugar and a bright, juicy acidity (5.7 g/l) that gives the wine a mouthwatering, linear profile. Citrus and stone fruit layer over a powerful mineral core, with nuances of grapefruit pith, chamomile, and fine herbal tones. The texture is concentrated yet elegant, with a firm, almost salty finish that lingers on stone, smoke and spice. Still very youthful, this Premier Cru has excellent aging potential; over 8–15 years it should gain further depth, aromatic complexity, and a more supple, creamy mid-palate while retaining its vibrant backbone.
Production
Rechbächel is one of Wachenheim’s finest sites and a true monopole of Dr. Bürklin-Wolf, lying on a south-facing slope that maximizes sunshine and ripeness in the Pfalz’s mild climate. The soils are a mix of red and yellow sandstone and gravel, underpinned by a roughly 1.20 m layer of alluvial stone at around 1.80 m depth—an ideal structure that secures water and minerals for the deep-rooted vines, while offering excellent drainage in wet periods. Farmed biodynamically, the vineyard relies on healthy soil life and vine balance rather than irrigation and heavy fertilization, encouraging the roots to dig deep for sustenance. Harvest is carried out by hand with strict selection to ensure optimal ripeness and purity of fruit. In the cellar, the grapes are gently pressed and undergo spontaneous fermentation with native yeasts in large, old oak casks. The wine is then matured for 10–12 months in these traditional foudres, allowing a slow, controlled evolution that preserves tension and minerality while adding subtle texture and harmony.
Food & Serving
This is a versatile, gastronomic Riesling that shines with refined, subtly aromatic cuisine. Pair it with shellfish (oysters, scallops, shrimp), grilled or steamed white fish, sushi and sashimi, or delicately spiced Asian dishes such as Thai or Vietnamese cuisine. It also works beautifully with poultry in light sauces, veal, fresh goat cheese, and vegetable-driven dishes featuring asparagus, fennel, or herb-laced salads. Serve well-chilled but not icy, ideally at 9–11°C, to allow the aromas and texture to fully unfold. A short decant of 20–30 minutes, especially in its youth, can help the wine open up and reveal its full spectrum of mineral and herbal nuances.

Dr. Bürklin-Wolf is one of Germany’s benchmark Riesling estates, with roots tracing back to 1597 in the village of Wachenheim in the Pfalz. Over generations, the family has assembled an enviable collection of top sites across Forst, Deidesheim, Ruppertsberg and Wachenheim, many of which are among the most celebrated ‘Lagen’ in the Mittelhaardt. A pioneer in adopting a Burgundian-style classification for dry Riesling, Bürklin-Wolf ranks its vineyards as Grand Cru and Premier Cru, emphasizing terroir and site expression.
