Description
The 2021 Dr. Bürklin-Wolf Pechstein Grand Cru is a benchmark dry Riesling from one of the most revered single vineyards in Germany’s Pfalz. Sourced from the basalt-rich Forster Pechstein site, this wine combines precision, depth and an almost tactile minerality. The 2021 vintage, shaped by a cooler growing season and meticulous vineyard work, has yielded a Riesling that is both classically structured and intensely expressive.
Tasting Notes
In the glass, the Pechstein Grand Cru shows a pale to medium lemon color with green reflections, signaling both freshness and concentration. The nose is immediately distinctive: crushed stone and wet basalt lead the way, joined by lemon zest, lime peel, white peach, green apple and a hint of quince, with subtle notes of smoke, flint, herbal lift and a salty sea-breeze character.
On the palate, this is taut, dry and finely etched, with a vibrant, almost electric acidity that frames a generous, full-bodied core of citrus and stone fruit. Layers of lemon oil, ripe lime, white nectarine and yellow plum are interwoven with saline notes, smoked stone and a deep, dark, volcanic minerality typical of Pechstein. The finish is long, linear and mouthwatering, with salt and citrus peel lingering long after each sip. This 2021 has the structure and acidity for long-term aging; it will gain even more complexity, texture and savory nuances over 10–20 years in the cellar, and potentially longer under ideal conditions.
Production
Pechstein is one of the Mittelhaardt’s most prized ‘Lagen’, a south to south-east facing Grand Cru site in Forst, characterized by its high content of black volcanic basalt mixed with sandstone and loam. This unique terroir is responsible for the wine’s unmistakable mineral and salty profile. Dr. Bürklin-Wolf farms the vineyard biodynamically, with great emphasis on low yields, careful canopy management and selective hand-harvesting at optimal ripeness. The Riesling grapes are gently pressed and the must is allowed to ferment spontaneously with native yeasts in large, traditional, old oak casks. After fermentation, the wine remains on its lees and matures for around 15 months in these large wooden barrels, a patient élevage that enhances texture, harmony and terroir expression without adding overt oak flavor.
Food & Serving
This Grand Cru Riesling is an outstanding partner for refined, flavorful dishes such as turbot or cod with beurre blanc, scallops, sushi and sashimi, or grilled prawns with herbs and citrus. It also shines alongside roasted poultry, veal in light cream sauces, pork tenderloin, and aromatic vegetable dishes such as asparagus, fennel or artichokes, as well as sophisticated vegetarian cuisine with mushrooms or root vegetables. Its saline, mineral edge makes it an excellent match for high-quality soft cheeses and aged goat cheese. Serve at 9–11°C (about 48–52°F) to balance freshness and aromatic complexity. Young bottles benefit from 30–60 minutes in a decanter to open up the nose and refine the palate; mature bottles should be handled gently and decanted only briefly to separate from any sediment.

Dr. Bürklin-Wolf is one of the historic and leading estates of the Pfalz, with centuries of winemaking tradition and around 85 hectares under vine, focused predominantly on Riesling. Now run by Bettina Bürklin-Wolf, the 22nd generation of the family, the estate has been a pioneer in redefining dry German Riesling at the highest level. Early on, they adopted a Burgundian-inspired quality pyramid, classifying their dry Rieslings by vineyard origin and using terms like Grand Cru and Premier Cru to emphasize terroir. Since 2001, the estate has been fully committed to biodynamic viticulture, making the wines even more terroir-driven, pure and expressive. As a member of the VDP, Dr. Bürklin-Wolf ranks among Germany’s most respected producers, and the wines from top sites such as Pechstein are widely regarded as reference points for modern, ageworthy Pfalz Riesling.
