Tasting Notes
In the glass, the 2021 Pingus is deep, opaque ruby with a vibrant purple rim, hinting at both concentration and youth. The nose is intensely aromatic yet beautifully composed: layers of ripe black cherry, blackberry, and plum are interwoven with notes of violets, graphite, warm spices, fine tobacco, and a subtle, polished oak character. With air, more nuances emerge—licorice, cocoa, and a faint mineral smokiness that speaks of its limestone-rich soils.
On the palate, Pingus is full-bodied but remarkably poised, with a core of pure, dark fruit wrapped in ultra-fine, velvety tannins. The texture is almost seamless, balancing richness with lifted acidity and a long, precise finish. Expect waves of black and blue fruit, sweet spice, dark chocolate, and a distinct savory, earthy undertone. While already impressive in its youth, the 2021 has significant aging potential; it should evolve gracefully for 15–25 years or more, gaining further complexity, tertiary nuances, and even greater harmony over time.
Production
Pingus is sourced from tiny parcels of very old, low-yielding Tinto Fino vines in Ribera del Duero, many planted on poor, sandy and limestone-based soils that naturally restrict vigor and concentrate flavor. Yields are kept extraordinarily low, often through meticulous green harvesting and strict bunch selection. Grapes are hand-harvested in small boxes, carefully sorted berry by berry, and vinified with a philosophy that privileges purity and finesse over sheer extraction. Fermentations typically occur in small wooden or stainless-steel vats with gentle handling, followed by aging in high-quality French oak barrels, a portion of which is new. The aim is to frame, not mask, the character of the fruit and the unique terroir that defines Pingus.
Food & Serving
This is a wine best reserved for refined, flavor-packed dishes: think roasted lamb with herbs, slow-braised beef or oxtail, suckling pig with crackling skin, or aged hard cheeses such as Manchego or Comté. It also pairs beautifully with truffle dishes, wild mushrooms, and richly sauced game birds. Serve at 16–18°C (61–64°F) to highlight its aromatic complexity and balance. Decanting is highly recommended—at least 2–3 hours in its youth—to allow the wine to unfold its many layers; older bottles may require shorter, more gentle decanting to keep their mature nuances intact.
