Tasting Notes
In the glass, the 2021 Dominio de Atauta shows a deep, vibrant ruby colour with violet reflections, hinting at both concentration and youthful energy. The nose opens with pure aromas of black cherry, wild blackberry and plum, layered with notes of dried flowers, fresh herbs, graphite and subtle spice. With air, more complexity emerges – hints of licorice, cocoa, smoke and a distinct stony, almost saline edge that speaks clearly of its origin. On the palate, this wine is precise and focused rather than heavy, with juicy dark fruit framed by lively acidity and fine, chalky tannins. The mid-palate shows lovely depth and savoury complexity: blackberries, redcurrants, sweet spices and a gentle earthiness leading into a long, mineral-tinged finish. Still youthful, it will benefit from a short time in the cellar, with an aging potential of around 8–12 years from vintage in good conditions, during which it will gain further aromatic nuance and softer, more integrated texture.

Production
Dominio de Atauta works in one of Ribera del Duero’s most distinctive terroirs: the secluded Atauta Valley, at high altitude and with extremely poor, limestone-rich soils interspersed with sand and clay. Vines here are often very old and low-yielding, naturally concentrating the fruit while preserving fresh acidity due to the marked day–night temperature swings. Harvest is typically carried out by hand, plot by plot, to ensure only perfectly ripe and healthy grapes reach the winery. In the cellar, the focus is on gentle extraction and clarity of site: fermentation usually takes place in small tanks with careful temperature control, followed by aging in a restrained proportion of oak (often French) to add structure and subtle complexity without overwhelming the wine’s mineral character.

Food & Serving
This 2021 Dominio de Atauta pairs beautifully with grilled or roasted lamb, Iberian pork, beef tenderloin, and game birds, as well as richer dishes like slow-braised short ribs, mushroom risotto and aged hard cheeses. Its balance of fruit, freshness and refined structure allows it to handle both simply grilled meats and more elaborate, sauce-driven dishes. For optimal enjoyment, serve at around 16–18°C (60–64°F). Young bottles will benefit from 30–60 minutes in a decanter to allow the aromatics to open and the tannins to soften, especially if enjoyed within the first few years after release.
