Production
Château Romassan is situated in the heart of Bandol, where terraced vineyards are carved into limestone and sandstone hillsides facing the Mediterranean. The terroir is defined by stony, well-drained soils, sea breezes, and abundant sunshine, all ideal conditions for slow-ripening Mourvèdre and its Rhône companions such as Grenache and Cinsault. Harvesting is typically carried out by hand to ensure careful selection of bunches at optimal ripeness. In the cellar, Domaines Ott combines traditional Bandol methods with modern precision: the grapes are destemmed and fermented in temperature-controlled vats to preserve aromatic purity, followed by an extended maceration to build structure and depth. The wine is then aged in large oak foudres and/or carefully selected barrels, allowing the tannins to refine and the components to harmonize without overwhelming the natural character of the fruit and terroir.
Food & Serving
This is a versatile yet decidedly gastronomic red that shines alongside hearty Mediterranean and French cuisine. Pair it with slow-braised lamb shanks, roast leg of lamb with rosemary and garlic, grilled ribeye, duck breast, game birds, or rich stews like daube provençale and boeuf bourguignon. It also works beautifully with aged hard cheeses, mushroom dishes, and herb-laden vegetable gratins. Serve at 16–18°C (60–64°F) to highlight its complexity and structure. Younger bottles will benefit from 1–2 hours in a decanter to soften the tannins and fully open the bouquet; older, well-cellared bottles can be gently decanted just before serving to remove any sediment.
