Tasting Notes
In the glass, the 2021 Domaine Matrot Corton-Charlemagne Grand Cru shows a luminous, pale to medium straw color with green highlights, hinting at both youth and freshness. The nose opens with refined orchard fruit—ripe apple and white peach—alongside notes of fresh pear, dried apricot, and citrus zest. Subtle layers of beeswax, honeysuckle, and acacia blossom add complexity, underpinned by a distinct chalky minerality and a gentle hint of toasted oak.
On the palate, the wine is fuller and richer than Matrot’s Meursault and Puligny cuvées, yet remains beautifully balanced. Flavors of peach skin, dried apricot, and ripe stone fruit are wrapped in a core of intense, saline minerality. The texture is silky and concentrated, with a fine, driving acidity that keeps the wine taut and precise. Delicate spice and subtle hazelnut from the élevage emerge on the long, persistent finish. While already delicious in its youth, this 2021 Corton-Charlemagne has the structure and freshness to evolve gracefully for 10–15 years or more, gaining further depth, creaminess, and complexity over time.
Production
The fruit for this Grand Cru comes from the highest part of the famed Corton hill, within the Corton-Charlemagne appellation spanning Aloxe-Corton, Pernand-Vergelesses, and Ladoix-Serrigny. Here, the slopes are steep (20–23%) and exposed, and the soils are a complex geological tapestry of 145-million-year-old Jurassic layers: clay-rich marls in shades of yellow, ochre, and brown over alternating bands of limestone and marl, capped by a thin layer of rendzina. These poor, mineral-laden soils naturally limit yields and concentrate flavor, while the elevated position preserves acidity and freshness.
Domaine Matrot harvests the grapes by hand, ensuring careful selection in the vineyard. The grapes are pressed as whole clusters, then the juice is left to settle for 24 hours before racking to barrel. Fermentation takes place using only natural yeasts in temperature-controlled oak barrels, and the wine undergoes complete malolactic fermentation, adding creaminess and texture while retaining tension. It is aged for 15 months on its fine lees in one- to two-year-old French oak barrels, allowing subtle, integrated wood influence without overpowering the terroir. A final three months of maturation in stainless steel tanks prepares the wine for bottling, sharpening definition and preserving purity.

Its powerful minerality and depth make it a remarkable partner for foie gras, whose richness is lifted and framed by the wine’s tension and structure. It also pairs beautifully with noble shellfish such as lobster, langoustine, and crab, where the sweet, delicate flesh is elevated by the wine’s concentration and saline drive. Cream-based poultry or veal dishes—like chicken or veal in white wine or cream sauces—are classic companions, as are flavorful blue cheeses, where the wine’s intensity and acidity provide balance and contrast.
Serve at 10–12°C (50–54°F) to allow the aromatics to unfold without losing freshness. In its youth, decanting for 30–45 minutes can help the wine open and reveal its full aromatic complexity. For older bottles, a gentle splash decant immediately before serving is sufficient, primarily to separate any sediment and let the wine breathe briefly.

Domaine Matrot traces its origins to the mid-19th century, when the estate began life under the Amoignon family name before transitioning to the Matrot name during World War I through marriage. Based in Meursault, the domaine has steadily built a reputation as a benchmark producer in the Côte de Beaune, crafting both white and red wines that range from regional bottlings to coveted Premier Cru and Grand Cru cuvées. Today, Thierry and Pascale Matrot, together with their daughters, continue the family tradition, combining sustainable vineyard practices with classic, low-intervention winemaking.
