Production
La Chatenière is a steep, south to south‑east–facing Premier Cru slope overlooking the village of Saint-Aubin, with thin, stony limestone soils that naturally limit yields and heighten mineral expression. Domaine Larue typically harvests by hand, ensuring careful selection of perfectly ripe and healthy Chardonnay bunches on these demanding inclines. After gentle pressing, the must is fermented in oak barrels, a portion of which are new, to add texture without overshadowing the vineyard character. The wine then matures on fine lees, with occasional bâtonnage (lees stirring) to build mid‑palate richness and complexity, before being assembled and lightly fined and filtered for bottling, with special care taken for the magnum format to support longer aging.
