The 2021 Domaine de Chevalier Pessac-Léognan Blanc is one of Bordeaux’s benchmark dry whites, combining precision, depth and remarkable freshness. Sourced from the estate’s gravelly terroir in the heart of Graves, this cuvée is prized for its tension, complexity and aging potential. As one of the few properties classified for both red and white in Graves, Domaine de Chevalier has built a long-standing reputation for producing some of the most elegant white wines in Bordeaux.

Tasting Notes
In the glass, the 2021 Pessac-Léognan Blanc shows a luminous pale straw color with green reflections, signaling its vibrancy and youth. The nose is refined and expressive, with layers of lemon zest, grapefruit, white peach and crunchy pear, underscored by floral notes of jasmine and acacia, plus hints of fresh herbs, wet stone and a discreet, well-judged touch of oak spice. On the palate, this vintage is all about tension and purity: vivid citrus and stone-fruit flavors are wrapped in bright, mouthwatering acidity and a distinct mineral backbone. The texture is both silky and energetic, with subtle creaminess from lees aging balanced by a cool, saline edge. Notes of lime, ripe gooseberry and orchard fruit evolve into a long, precise finish with a whisper of smoke and toasted almond. While already impressive in its youth, this 2021 has the structure to develop beautifully over 10–15 years, gaining more complexity, honeyed nuances and a richer, more layered profile with time in bottle.

Production
Domaine de Chevalier’s white vines are planted in classic Pessac-Léognan terroir: deep gravel soils mixed with sand and clay over a well-drained subsoil, surrounded by forest that moderates the microclimate and helps preserve freshness. The blend is dominated by Sauvignon Blanc, supported by Sémillon (and occasionally a touch of Muscadelle), yielding a wine that marries aromatic lift with texture and depth. Harvesting is done entirely by hand, often in several passes through the vineyard to pick each parcel at optimal ripeness. In the cellar, the must is gently pressed and then fermented in oak barrels, a portion of which are new, to add complexity without overpowering the fruit. The wine is aged on fine lees with regular bâtonnage (lees stirring) for added creaminess and mid-palate weight, while maintaining the clarity and tension that define great dry white Bordeaux.

Food & Serving
The 2021 Domaine de Chevalier Blanc is a superb partner for refined seafood and elegant, subtly prepared dishes. Think oysters, langoustines, scallops, grilled turbot, lobster with beurre blanc, or delicate sushi and sashimi, as well as roasted chicken, veal in light cream sauces, and fine goat’s cheese or aged Comté. Serve ideally at 10–12°C (50–54°F) to highlight its aromatics and minerality. Young bottles benefit from being opened 30–45 minutes before serving; a brief decant can help the wine unfurl its floral and citrus complexity, especially in its first few years, while older bottles are best gently poured and enjoyed soon after opening.
