Tasting Notes
In the glass, this Volnay Santenots shows a luminous, medium-deep ruby color with a translucent rim that hints at its finesse-driven style. The nose is pure and perfumed, opening with red berries—wild strawberry, raspberry and red cherry—layered with rose petals, subtle violets, and a touch of sun-warmed earth and dried herbs. With air, more complexity emerges: hints of forest floor, gentle spice and a whisper of fine oak.
On the palate, the wine is supple and graceful, yet underpinned by a firm, well-shaped tannic backbone. The attack is silky with juicy red fruit at the core, followed by notes of cranberry, pomegranate, and a delicate savory edge of earth and herbs. The tannins are robust but very well-polished, giving the wine an elegant roundness and a long, persistent finish marked by freshness and mineral tension. While already delicious and approachable thanks to its balanced structure, this 2021 Volnay 1er Cru Santenots has excellent aging potential; it should develop beautifully over 8–15 years, gaining further aromatic complexity, silkier texture, and more pronounced sous-bois and truffle nuances with time in the cellar.
Production
Domaine Ballot-Millot’s Volnay 1er Cru Santenots comes from a tiny 0.5-hectare holding in one of Volnay’s most respected Premier Cru climats, where well-drained, limestone-rich soils and a favorable slope exposure naturally limit yields and heighten concentration. In keeping with the estate’s philosophy of respecting terroir, the vines are carefully tended with pruning for lower yields and a strong focus on preserving old vines, and the domaine is progressively moving toward organic practices. Harvest is carried out by hand to ensure optimal selection of perfectly ripe Pinot Noir grapes. In the cellar, Charles Ballot employs traditional Burgundian methods: gentle, complete fermentation in wood, followed by a soft, slow pressing and a measured, extended vinification designed to extract fine tannins rather than brute power. The wine is then aged for around 12 months in French oak barrels, predominantly one- to two-year-old barrels, which lend subtle support without overwhelming the purity of the fruit or the expression of the Premier Cru terroir.

This Volnay 1er Cru Santenots is a natural partner for refined dishes based on red meat and game, such as roasted lamb, veal tenderloin, duck breast, venison, or guinea fowl with wild mushrooms. It also pairs beautifully with classic Burgundian fare—coq au vin, pigeon, or rabbit—as well as aged cheeses like Comté, Tomme, or a fine matured Gouda. Serve at 15–16°C (59–61°F) to highlight its aromatic delicacy and textural finesse. Young bottles benefit from 45–60 minutes in a decanter to allow the bouquet to open fully; more mature bottles should be handled gently, with a brief decant only if needed to remove sediment.

Domaine Ballot-Millot is a historic family estate based in Meursault, with roots stretching back to the 1600s and a reputation today as one of the top names in the Côte de Beaune. Now run by Charles Ballot, who took over from his father Philippe in 2000, the domaine farms around 30 hectares, focusing primarily on Chardonnay from some of the finest terroirs in Meursault and Chassagne-Montrachet, alongside select parcels of Pinot Noir in Pommard, Volnay and Chassagne. Charles has elevated the estate into the regional elite by combining deep respect for tradition—low yields, preservation of old vines, and classic cellar work—with thoughtful innovation and investment in modern equipment to refine precision and purity.
