Domaine Balland-Curtet farms these vineyards with a strong respect for the land, favoring careful, predominantly manual work in the vines and selective hand-harvesting at optimal ripeness to preserve acid balance and purity. In the cellar, the grapes are gently pressed and the must is settled before being transferred to French oak barrels—typically with a restrained proportion of new oak—for alcoholic and malolactic fermentation. The wine is then aged on fine lees, with periodic bâtonnage as appropriate to the vintage, to build texture while maintaining the linear, mineral profile that defines Puligny-Montrachet.
