Subtle cedar, cocoa, and a touch of pencil shavings add further complexity as it opens. Production
Dalla Valle’s estate vineyard is perched on the eastern benchlands of Oakville in Napa Valley, where volcanic, iron-rich, well-drained soils and a warm, sunny exposition produce grapes of remarkable concentration and character. Farming is meticulous and largely guided by sustainable and organic principles, with careful canopy management and low yields to ensure optimal ripeness and flavor intensity. The fruit—primarily Cabernet Sauvignon with a significant portion of Cabernet Franc—is harvested by hand in small lots at ideal physiological maturity, then sorted berry by berry before fermentation. Vinification typically takes place in temperature-controlled vessels, followed by an extended élevage in French oak barrels, a high proportion of which are new, to refine tannins and build texture while preserving purity and terroir expression.

The 2021 Dalla Valle Maya is a natural partner for richly flavored, refined cuisine. Think dry-aged ribeye, herb-crusted lamb, venison, or braised short ribs, as well as truffle-infused dishes, mushroom ragù, or hard, aged cheeses like Comté or Parmigiano-Reggiano. For optimal enjoyment, serve at 16–18°C (60–65°F). In its youth, decanting for 1.5–3 hours will help the wine unfurl its aromatic complexity and soften the structure; as it matures, a shorter decant of around 45–60 minutes is sufficient to remove sediment and allow the bouquet to blossom.
