On the palate, it should be structured and refined, with firm but polished tannins, bright acidity, and a core of dark berry fruit layered with tobacco, pencil shavings, and a touch of mineral complexity. This is a wine that can be approached with pleasure in its youth after proper aeration, but it also has the balance and structure to develop beautifully over 10–20 years or more, depending on storage.
Production
Pontet-Canet is located in Pauillac on Bordeaux’s Left Bank, where gravel soils over clay and limestone provide ideal conditions for Cabernet Sauvignon-driven wines. The estate is known for organic and biodynamic viticulture, with careful vineyard work aimed at preserving soil vitality and expressing terroir as clearly as possible. Harvesting is typically done parcel by parcel to capture optimal ripeness, and vinification focuses on gentle extraction and precision to preserve freshness, purity, and site expression.
Food & Serving
This wine pairs beautifully with roast lamb, entrecôte, beef tenderloin, game birds, truffle dishes, and mature hard cheeses. Serve at around 16–18°C, and consider decanting for 1–2 hours if opening young to allow the wine to unfold its full aromatic depth and soften its tannins.
