Tasting Notes
In the glass, the 2021 Château Pédesclaux shows a deep, vibrant ruby-purple hue with a youthful rim. The nose opens with pure blackcurrant and blackberry, joined by classic Pauillac notes of graphite, pencil shavings and cedar, layered with hints of violet, tobacco leaf and subtle spice from well-judged oak.
On the palate, this is medium to medium-plus bodied, chiselled and energetic rather than opulent, with finely grained tannins framing a core of cassis, dark cherries and wild berries. Savoury undertones of graphite, cigar box, crushed rock and a touch of cocoa add complexity, while a bright, fresh acidity gives lift and precision through the long, mineral-tinged finish. Still youthful, the wine will benefit from a few years of cellaring and should evolve gracefully over 10–15 years, gaining more aromatic complexity and textural harmony.
Production
Sourced from gravel and clay-gravel soils typical of Pauillac, the 2021 Château Pédesclaux reflects a terroir that naturally favours Cabernet Sauvignon, often blended with Merlot and smaller proportions of Cabernet Franc and Petit Verdot to add suppleness and aromatic nuance. The estate, now farmed with a strong focus on sustainable and organic practices, conducts detailed parcel selection and hand-harvesting to ensure optimal ripeness and berry integrity, particularly important in a cooler, more classical vintage like 2021. After careful sorting, the grapes are vinified parcel by parcel, often in temperature-controlled stainless steel or concrete vats, with gentle extraction to preserve freshness and fine tannins rather than brute force. The wine is then aged in French oak barriques (a proportion new) to integrate structure and add subtle spice, while allowing the purity of fruit and the Pauillac typicity to take centre stage.
Food & Serving
This refined Pauillac pairs beautifully with classic dishes such as roast lamb with rosemary, beef ribeye, duck breast, or veal with a red wine reduction. It also works well with game birds, mushroom-based dishes, truffle risotto and aged hard cheeses like Comté or mature cheddar. Serve at 16–18°C (about 60–64°F) for optimal expression. In its youth, decanting for 1–2 hours will help open the aromatics and soften the tannins; as the wine matures, a shorter decant mainly to remove any sediment will suffice.
