Tasting Notes
In the glass, the 2021 Château Pavie is an opaque purple-black, almost impenetrable at the core with a vivid violet rim, hinting at both concentration and youth. The nose opens in generous layers: warm plum pudding, blueberry tart and dark chocolate–dipped cherries are lifted by notes of eucalyptus, star anise and cedar, then grounded by hints of fine tobacco and fertile, earthy forest floor. On the palate, this is full-bodied and muscular, built "like a brick house" yet remarkably refined. Dense black and blue fruits – black plum, cassis, ripe blueberries and black cherries – are wrapped in very firm but wonderfully ripe, velvety tannins. A line of seamless freshness runs through the wine, keeping the richness in check and adding definition to its mineral, limestone-driven core. Subtle oak spices from maturation in French barrels (around 75% new) are already well integrated, framing a long, layered finish with lingering graphite, cocoa and savory earth. This is a wine with serious aging potential; while it can be approached after 7–10 years, it will reward 15–25 years of careful cellaring, gaining complexity, truffle notes and silky texture over time.

Production
Château Pavie’s 42-hectare vineyard lies on some of Saint-Émilion’s most prized south-facing slopes, where a patchwork of limestone, clay and sandy soils creates multiple microclimates within a single estate. This diversity allows Merlot, Cabernet Franc and Cabernet Sauvignon to ripen slowly and evenly, often making Pavie one of the last properties to finish harvest in the appellation. The estate farms responsibly, with around 70% of the vineyards already cultivated organically and a goal of reaching full organic status. In the winery, grapes are carefully sorted and vinified parcel by parcel to capture the nuances of each terroir. The wine is then aged in French oak barrels, about 75% new, where it develops texture, depth and aromatic complexity without losing its natural freshness and mineral backbone.

Food & Serving
The 2021 Château Pavie is a natural match for richly flavored dishes: roasted or grilled lamb, dry-aged ribeye, venison, slow-braised short ribs, or classic French preparations like entrecôte bordelaise and duck with red wine reduction. It also pairs beautifully with truffle dishes, wild mushroom ragout, and aged hard cheeses such as Comté, Parmesan or aged Gouda. Serve at 16–18°C (60–64°F) to highlight both fruit and structure. For young bottles, decanting for 2–3 hours is recommended to soften the tannins and allow the aromatics to unfold; mature bottles will benefit from a gentler, shorter decant primarily to remove sediment.

Since 1998, the property has been owned and driven by Gérard Perse, a self-made entrepreneur from Paris who turned his focus entirely to wine after building a successful supermarket franchise business. Initially controversial for his rigorous vineyard practices—such as green harvesting to reduce yields and boost concentration—Perse ultimately helped redefine quality expectations in Saint-Émilion, with many of his once-radical methods now common practice. Today, Château Pavie is considered a flagship of the Right Bank, regularly receiving top scores from leading international critics and standing as a reference for powerful yet refined Saint-Émilion wines.
