Grapes are typically harvested parcel by parcel at optimal maturity, often by hand to allow for strict sorting of bunches and berries. In the cellar, vinification combines state-of-the-art technology with traditional methods: gentle extraction in temperature-controlled vats, followed by aging in French oak barrels (a significant proportion new) to integrate tannins and add aromatic complexity, while still preserving the wine’s signature Graves minerality and precision.
