In the glass, the 2021 Pavillon Rouge shows a vibrant, deep ruby color with youthful purple reflections at the rim. The nose is finely etched and aromatic, with notes of blackcurrant, wild raspberry, and red plum layered with violet, graphite, cedar, and a hint of crushed tobacco and subtle spice from well-integrated oak.
On the palate, it is medium to full-bodied yet remarkably elegant, with a core of pure, cool-fruited Cabernet character—think cassis, wild berries, and a touch of red cherry—supported by fine-grained tannins and bright, refreshing acidity. Hints of pencil shavings, cigar box, and a delicate floral lift linger on a long, precise finish. While already harmonious in its youth, this wine has the structure to evolve gracefully for 10–15 years, gaining complexity and softness with time in the cellar.
Production
Sourced from the historic gravel soils of Margaux, the 2021 Pavillon Rouge comes from plots within the Château Margaux estate that share the same exceptional terroir as the grand vin—deep Garonne gravels over well-drained subsoils that naturally favor Cabernet Sauvignon. The grapes are hand-harvested in small crates, with meticulous sorting both in the vineyard and at the winery to ensure only pristine fruit is selected. Vinification takes place in temperature-controlled vats, with gentle extraction to preserve finesse and aromatic purity, followed by maturation in French oak barrels (a significant proportion new), where the wine gains texture, polish, and subtle complexity without losing its hallmark elegance.
Food & Serving
This Margaux is a natural partner for refined dishes such as roast lamb with herbs, beef tenderloin, veal chops, or duck breast with a red wine reduction. It also pairs beautifully with earthy mushroom dishes, truffle risotto, and aged hard cheeses like Comté or matured Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic delicacy and structural balance. Young bottles will benefit from 1–2 hours in a decanter to allow the bouquet to open and the tannins to soften, while older vintages can often be served after a brief, gentle decant to remove any sediment.
