Here, deep gravel soils over a limestone and clay subsoil provide excellent drainage and naturally low yields, producing Cabernet Sauvignon and Merlot of striking purity and aromatic intensity, complemented by small amounts of Cabernet Franc and Petit Verdot. Harvesting is carried out parcel by parcel, entirely by hand, so that only perfectly ripe, healthy bunches reach the cellar. After rigorous sorting, the grapes are vinified in temperature-controlled vats—traditional wooden and stainless steel—allowing precise fermentation management for each plot. The wine is then matured in French oak barrels, with a proportion of new oak (typically lower than for the grand vin) to preserve Carruades’ supple structure and bright fruit, while still imparting the subtle spice, structure, and texture associated with Lafite’s élevage.
