The estate is farmed with meticulous parcel selection and hand-harvesting to ensure optimal ripeness, especially important in a cooler, more classical vintage such as 2021. After strict sorting, the grapes—typically a blend dominated by Cabernet Sauvignon and Cabernet Franc with a significant share of Merlot—are vinified by plot in temperature-controlled vats to preserve purity of fruit and terroir expression.
