2021 Château de Callac Cuvée Prestige Graves Blanc is a refined white Bordeaux that shows just how elegant Graves can be. Crafted from 80% Sauvignon Blanc and 20% Sémillon, this is the estate’s top white cuvée, combining freshness, texture and subtle oak in a beautifully balanced style. From a small 7-hectare plot on one of the highest points in Illats, it delivers both classic Graves character and impressive value for its pedigree.

Tasting Notes
In the glass, this wine presents a luminous, pale straw color with green reflections that hint at its vibrancy and youth. The nose is complex yet precise, opening with citrus notes of lemon and grapefruit, followed by white flowers, a touch of ripe orchard fruit, and a gentle whisper of cinnamon and vanilla from the brief oak aging. The oak influence is refined and integrated, adding nuance rather than weight. On the palate, the Cuvée Prestige is silky and velvety, with a soft, rounded texture supported by lively acidity. Flavors of citrus, subtle stone fruit and yellow plum are layered with delicate spice, vanilla and a faint hint of toast, giving depth without overshadowing the wine’s freshness. The finish is long and persistent, with a fine, almost tactile grip from the light tannins of the new French oak. Enjoyable now for its precision and charm, it has the structure and balance to develop additional complexity over the next 3–6 years, gaining more honeyed and nutty nuances with time in bottle.

Production
Château de Callac’s Cuvée Prestige is sourced from a single 7-hectare plot in the Graves appellation, perched on one of the highest points of the Illats commune, southeast of Bordeaux. The terroir here is classic Graves, with gravelly soils that offer excellent drainage and help concentrate flavor while preserving freshness in the grapes. All fruit for this cuvée is harvested by hand and transported in small crates to protect the berries. In the cellar, the grapes are carefully sorted before being gently pressed in a pneumatic press to obtain pure, delicate juice. After pressing, the must is clarified and then fermented at a cool, controlled temperature of around 18°C in thermoregulated cuves for about 10 days, preserving aromatic intensity and precision. The wine then matures for about one month in French oak barrels, 25% of which are new, with the remainder in used barrels, to add texture and complexity while keeping the oak influence subtle and elegant.

Food & Serving
This Graves Blanc is a superb partner for refined seafood dishes and creamy preparations. It shines with turbot in a cream sauce (pighvar à la crème), lobster with a rich butter or shellfish sauce, scallops, or delicate white fish in a velouté. It also pairs beautifully with fine poultry in cream-based sauces and mild, creamy cheeses. Serve well-chilled but not icy, ideally around 10–12°C, to allow the aromatic complexity and oak nuances to express themselves. A brief decant of 20–30 minutes, or simply opening the bottle a little before serving, can help the wine open up further, especially in its first few years.

Founded in 1773, Château de Callac began life as a mixed farm with just 4 hectares dedicated to vines and cereals. Today, the estate cultivates over 40 hectares of vineyards in the Graves appellation, focusing on expressive dry white wines and characterful reds that reflect their gravelly terroir. In 2022, Château de Callac transitioned to organic viticulture, underscoring its commitment to sustainable, quality-driven farming. The wines are internationally recognized for their excellent price-to-quality ratio and have earned a place in several curated Bordeaux selections, including Grand Cru-style and ‘greatest selection’ assortments, confirming the château’s reputation as a serious and dependable name in modern Graves.
