Tasting Notes
In the glass, the 2021 Cos d'Estournel shows a deep, vibrant ruby-purple hue with a luminous edge, hinting at both concentration and freshness. The nose is finely etched and aromatic rather than opulent: blackcurrant, mulberry and crushed blackberry are lifted by notes of graphite, cedar, fresh tobacco leaf and violets. Subtle layers of incense, Asian spice, pencil shavings and wet stone reveal themselves with air, reflecting the estate’s signature exotic complexity in a more understated, classical register.
On the palate, this is precise and linear, with a cool-fruited profile and beautiful tension. Ripe cassis, redcurrant and black cherry are framed by firm but polished tannins and a vibrant, mouthwatering acidity that stretches the wine long across the finish. Hints of cocoa nib, iron, savory herbs and a saline minerality add detail and energy, leading to a long, refined finish that is more about length and finesse than sheer weight. The 2021 vintage at Cos d’Estournel is built for aging; while it will begin to drink well after 8–10 years in bottle, it has the structure and balance to evolve gracefully for two to three decades in a good cellar.
Production
Château Cos d'Estournel lies on a prominent gravel hill in Saint-Estèphe, just across the border from Pauillac, where deep layers of Garonne gravel over limestone and clay provide perfect drainage and drive Cabernet Sauvignon to exceptional ripeness and aromatic intensity. The 2021 vintage, cooler and more challenging than its predecessors, required meticulous vineyard work: strict green harvesting, canopy management and careful selection of bunches, with much of the estate’s fruit harvested by hand parcel by parcel to capture optimal ripeness and preserve freshness. In the winery, individual plots are vinified separately in temperature-controlled stainless steel and wooden vats, with gentle extraction tailored to the vintage’s more delicate fruit. The final blend, typically dominated by Cabernet Sauvignon with Merlot, Cabernet Franc and Petit Verdot, is matured in a high proportion of French oak barriques (with a significant share new), where it undergoes élevage to refine the tannins, build texture and integrate the oak without masking the clarity and energy that define 2021.
Food & Serving
This vintage’s poise and structure make it a particularly versatile partner at the table. Classic pairings include roast lamb with herbs, dry-aged ribeye or côte de boeuf, venison, and dishes featuring wild mushrooms or truffle. It also works beautifully with rich poultry such as roast duck or guinea fowl, as well as aged hard cheeses like Comté, Beaufort or mature cheddar. Serve at 16–18°C (60–64°F) to showcase both fruit and aromatic complexity. In its youth, decanting for 2–3 hours is recommended to soften the tannins and open up the bouquet; as the wine matures, a gentle 30–60 minute decant to remove sediment and awaken the aromatics will be sufficient.
