The nose is elegant and precise: notes of blackcurrant, crunchy red cherry, graphite, cedar, and tobacco leaf mingle with hints of violets, dark chocolate, and a gentle spice from well-judged oak.
On the palate, this is medium to medium-plus bodied, with a taut, linear profile and polished tannins. Classic Pauillac flavors of cassis, blackberries, pencil shavings, cigar box, and gravelly minerality are wrapped in bright, refreshing acidity that gives the wine lift and length. Production
Château Clerc Milon’s vineyards lie on the northern reaches of Pauillac, on well-drained Garonne gravel over limestone and clay—prime terroir shared with some of the most famous names in the Médoc. The blend is typically dominated by Cabernet Sauvignon, supported by Merlot, Cabernet Franc, Petit Verdot and a touch of Carmenère, each variety contributing layers of complexity and character. Grapes are harvested parcel by parcel, often by hand, to ensure optimal ripeness and careful selection, which was especially important in the cooler, more demanding 2021 vintage. Vinification takes place in temperature-controlled vats, followed by maturation in French oak barriques (a significant proportion new), allowing the wine to develop structure, aromatic complexity, and the hallmark Pauillac finesse while preserving the freshness and precision of the vintage.

This 2021 Pauillac is a natural partner for classic meat dishes: think roast lamb with rosemary and garlic, ribeye steak, duck breast, or venison with a red wine reduction. It also pairs beautifully with aged hard cheeses like Comté, Manchego, or mature cheddar, and with earthy dishes featuring mushrooms or truffles. For optimal enjoyment, serve at 16–18°C (60–64°F). In its youth, decanting for 1–2 hours helps the aromas open and the tannins soften; as the wine gains bottle age, a shorter decant primarily to remove any sediment will be sufficient.
