Production
Le Petit Cheval Blanc is sourced from carefully selected parcels of white varieties planted on the cooler, clay and gravel-influenced soils not far from Château Cheval Blanc in Saint‑Émilion. These vineyard sites, chosen for their natural freshness and ability to retain tension in warmer seasons, are typically planted to a majority of Sauvignon Blanc complemented by Sémillon for texture and complexity. Grapes are harvested by hand in small crates, with rigorous sorting to ensure only the most pristine fruit reaches the cellar. Fermentation generally takes place in a mix of oak barrels and larger vessels to balance aromatic intensity and structure, followed by maturation on fine lees with gentle bâtonnage. The result is a finely tuned, limited-production white Bordeaux that combines precision, minerality and subtle oak integration.

Food & Serving
This is a highly versatile gastronomic white, ideal with refined seafood and lighter dishes. Think oysters, scallops, turbot, lobster, sushi and sashimi, as well as delicate poultry, veal in cream sauces, or seasonal vegetable dishes featuring asparagus, fennel or artichokes. Fresh goat cheese, young Comté or aged Gruyère also make excellent companions. Serve well-chilled but not icy, ideally at 10–12°C (50–54°F), to allow the aromatics and texture to open.
