In the glass, the 2021 Cheval Blanc is a deep, dark purple with vivid violet reflections at the rim, signaling both youth and intensity. The nose is strikingly complex and layered: lifted floral notes of lilac and violet intertwine with fresh red fruits, subtle blue fruit, and delicate herb nuances. Aromas of kirsch, wild raspberry and blueberry reduction are supported by impeccably integrated oak, adding gentle hints of spice and fine cedar without ever overshadowing the fruit.

A concentrated core of refreshing red fruit – cherry, raspberry and redcurrant – is framed by a silky yet firm tannic structure that feels fine-grained and exact rather than heavy. Production
Château Cheval Blanc sits on a unique patchwork of gravel, clay and sand on the Saint-Émilion plateau, a terroir particularly renowned for producing world-class Cabernet Franc. For the 2021 vintage, the blend comprises 52% Cabernet Franc, 33% Merlot and 5% Cabernet Sauvignon, each parcel carefully harvested at optimal ripeness. In the estate’s ultra-modern winery, designed by architect Christian de Portzamparc, micro-vinification is carried out in 50 specially shaped, tronconic concrete vats, each dedicated to individual plots. Concrete is used for its excellent thermal inertia and gentle interaction with the wine, while the truncated conical shape ensures a soft, controlled extraction of color, tannin and aroma. Gravity-flow principles are employed throughout, eliminating the need for pumping and allowing the berries and juice to move delicately through the winery. This meticulous approach, representing a major investment purely in service of quality, preserves purity of fruit, enhances texture and underpins the wine’s characteristic refinement.

The 2021 Château Cheval Blanc is a natural partner for refined, flavorful dishes that echo its elegance and complexity. Consider pairing it with roast lamb studded with garlic and rosemary, tournedos of beef with truffle jus, pigeon or duck breast, or veal with morel mushrooms. It also shines alongside aged hard cheeses such as Comté, mature Gouda or well-aged cheddar. Serve at 16–18°C (60–64°F) to showcase its aromatic detail and structural finesse. For current enjoyment in its youth, a gentle decant of 1–2 hours will help the wine open and integrate.
