Château Changyu Moser XV is based in Ningxia, in north-central China, where vineyards sit at altitude along the eastern foothills of the Helan Mountains. This high, semi-desert plateau benefits from strong diurnal temperature swings, abundant sunshine and well-drained, gravelly and sandy soils—conditions well-suited to structured, aromatic Cabernet Sauvignon. Grapes for the Longyu M12 are typically harvested by hand to allow for careful selection in the vineyard, then gently destemmed and fermented in temperature-controlled tanks to preserve pure fruit expression. After fermentation, the wine spends a period maturing in a combination of stainless steel and oak (often French), which helps refine the tannins, add subtle spice notes, and maintain a clean, contemporary style.
