Crafted from 71% Merlot and 29% Cabernet Franc, it marries depth and refinement, offering a wine that is both immediately seductive and built for graceful evolution. As one of Saint-Émilion’s Premier Grand Cru Classé estates, Château Canon has long been celebrated for wines that stand shoulder to shoulder with the appellation’s greats, and 2021 continues that legacy with remarkable precision and purity.

Tasting Notes
In the glass, the 2021 Château Canon shows an intense red-purple hue, vivid and youthful, hinting at both concentration and freshness. The bouquet is expressive and layered, leaping from the glass with notes of ripe cherries, redcurrant jelly, wild blueberries and black raspberries. These vibrant fruit tones are interwoven with exotic spice nuances of ground cinnamon, clove oil and star anise, all underpinned by an earthy, forest-floor minerality and a whisper of fresh-turned soil. On the palate, this is a medium to full-bodied wine with a beautiful sense of finesse rather than sheer power. The fruit profile spans black, red and blue berries, tightly knit yet already harmonious, supported by finely textured, ripe tannins that feel almost powdery in their polish. A lively, juicy acidity brings energy and lift, carrying the flavours across the palate and into a long, refined finish laced with exotic spice and stony, mineral sparks. The structure and balance suggest excellent aging potential: it will drink well from the mid-term yet reward cellaring for 10–20 years or more, gaining complexity and tertiary nuances over time.

Production
Château Canon’s vineyards sit atop the famed limestone plateau of Saint-Émilion, a terroir that naturally yields wines of precision, minerality and elegance. This elevated site, with its thin clay-limestone soils over solid rock, encourages deep root systems and naturally low yields, concentrating flavour and imparting a signature chalky freshness. The grapes—predominantly Merlot with a substantial share of Cabernet Franc—are carefully hand-harvested parcel by parcel at optimal ripeness to preserve fruit purity and aromatic detail. In the cellar, the lots are vinified separately, allowing for meticulous selection and blending, before the wine is aged for 16–18 months in French oak barrels, 50% of which are new. This balanced use of oak adds subtle spice and texture without overwhelming the clarity of fruit or the mineral backbone that defines Canon’s style.

Food & Serving
This Saint-Émilion is a natural partner for refined, savoury dishes such as roast lamb with herbs, beef tenderloin, veal chops, or duck breast with berry or spice reductions. It also pairs beautifully with truffled poultry, game birds, mushroom-based dishes, and aged hard cheeses like Comté or matured Gouda, where its elegance and spice can really shine. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and silky structure. For younger bottles, decanting for 1–2 hours is recommended to allow the wine to open fully; as it matures, a gentle, shorter decant primarily to remove sediment will be sufficient.

Producer
Château Canon is one of the historic jewels of Saint-Émilion, recognized as Premier Grand Cru Classé and revered for its commanding position on the appellation’s limestone plateau. Owned by the Wertheimer family—who also own the iconic fashion house Chanel and Château Rauzan-Ségla in Margaux—Canon has seen a remarkable rise in quality over the past decades. Under the leadership of director John Kolasa and, more recently, with the input of a new generation including cellar master Stéphane Bonnasse, the estate has focused on precision in both vineyard and cellar, using organic treatments (though not yet certified) and meticulously managing their 34 hectares of vines. The acquisition of neighboring Château Matras in 2011 expanded the estate and helped refine the holding, with some parcels dedicated to the second wine, Clos Canon. Today, Château Canon stands as a benchmark for modern classic Saint-Émilion, consistently producing wines that are both concentrated and exquisitely elegant, and widely regarded among the top wines of the Right Bank.
