Description
Bottled in an impressive magnum, the 2021 Château Canon captures the elegance and quiet power that have made this Saint-Émilion estate one of Bordeaux’s most admired names. In a cooler, classic vintage like 2021, Canon leans into finesse over sheer weight, offering superb precision, freshness, and aromatic detail. This is a refined Right Bank claret that will reward both collectors and enthusiasts looking for a wine that unfolds slowly and beautifully at the table or in the cellar.
Tasting Notes
In the glass, the 2021 Château Canon shows a deep, vibrant ruby color with a bright rim, signaling its youthful energy and moderate concentration. The nose is finely etched and pure: expect aromas of crushed red and black cherries, wild raspberry, and ripe plum layered with floral notes of violet and rose petal, plus subtle hints of graphite, cedar shavings, and a gentle herbal lift reminiscent of fresh bay and thyme.
On the palate, this vintage is all about balance and refinement rather than sheer density. Medium to medium-plus in body, it offers silky yet structured tannins, laced with fresh acidity that drives the wine forward. Flavors of redcurrant, black cherry, and blueberry mingle with cocoa powder, tobacco leaf, and a touch of savory spice. The finish is long, chalk-tinged, and precise, reflecting Canon’s limestone terroir. In magnum, its aging potential is notably enhanced: it should begin to hit its stride after 6–8 years and continue to evolve gracefully for 15–20 years or more, developing greater complexity, truffle, and forest-floor nuances with time.
Production
Château Canon lies on the fabled limestone plateau of Saint-Émilion, where vines rooted in deep clay-limestone soils produce wines of natural tension, minerality, and aromatic lift. The blend is typically dominated by Merlot, supported by Cabernet Franc, with grapes harvested parcel by parcel at optimal ripeness to preserve freshness in a cooler year like 2021. Vineyard work is meticulous, with careful canopy management and strict selection in the vineyard and at the sorting table. Fermentation takes place in temperature-controlled vats, allowing for gentle extraction to respect the fine-boned structure of the vintage, followed by aging in French oak barrels (a proportion new) to bring subtle spice and polish without overwhelming the purity of fruit. The result is a poised, terroir-driven Saint-Émilion that finds an ideal home in the magnum format.
Food & Serving
The 2021 Château Canon Magnum pairs beautifully with refined, not overly heavy dishes that highlight its freshness and elegant structure. Think roasted lamb with herbs, veal chops, duck breast, beef tenderloin, or classic French bistro fare like entrecôte with pommes frites. It’s also superb with mushroom dishes—truffle risotto, wild mushroom ragout, or roasted root vegetables—and aged semi-hard cheeses such as Comté, Gruyère, or aged Gouda. Serve at 16–18°C (about 60–64°F) to show both fruit and aromatic complexity; if the bottle is very cool, allow it to warm slightly in the glass. In its youth, decanting a magnum for 1–2 hours will help the wine open and soften the tannins; as it matures, a brief, gentle decant mainly to remove sediment will suffice.
Producer
Château Canon is one of the historic jewels of Saint-Émilion, with origins dating back to the 18th century and a long-standing reputation for producing some of the appellation’s most elegant and ageworthy wines. Perched on the limestone plateau just outside the medieval village, the estate has become a benchmark for classic Right Bank Bordeaux, particularly since major investments and renewed focus on quality in the 21st century. Under the ownership of the Wertheimer family (also owners of Chanel) and the guidance of a dedicated winemaking team, Canon has risen to the very top tier of Saint-Émilion, consistently lauded by critics for its precision, purity, and terroir expression. Its wines, especially in large formats like magnums, are prized by collectors for their ability to mature gracefully over decades while remaining eminently drinkable along the way.
