2021 Château Astruc Teramas Chardonnay Limoux is the flagship oak-aged Chardonnay in the Paul Mas range, crafted from high-altitude vineyards at the foot of the Pyrenees. This is a richly textured yet finely balanced white that marries sun-ripened Languedoc fruit with the freshness and precision that Limoux is known for. Sourced from a single special vineyard with limestone- and gravel-rich soils, Teramas showcases both its terroir and meticulous barrel aging in a refined, Burgundian-inspired style.
Tasting Notes
In the glass, the 2021 Teramas Chardonnay shows a bright, luminous robe with shining golden hues. The appearance suggests both youth and concentration, with a gentle viscosity that hints at its time in oak.
The nose is intense and layered, opening with classic Chardonnay notes of butter and brioche, intertwined with ripe tropical fruit such as pineapple and mango. These richer aromas are lifted by delicate white flowers and a touch of citrus zest, while subtle vanilla and toasted nuances from the French and American oak add complexity.
On the palate, the wine is full-bodied and generous, yet retains an elegant, well-poised structure. Ripe stone and tropical fruits are wrapped in a creamy texture, balanced by a fresh acidity derived from the higher altitude of the Limoux vineyards. The partial malolactic fermentation brings a smooth, rounded mouthfeel without losing vibrancy, and the long, persistent finish carries notes of toast, butter, and a faint mineral edge.
Enjoyable now for its expressive fruit and oak integration, this Chardonnay also has the potential to age gracefully for several years. Over the first five years, you’ll primarily enjoy the vivid fruit and floral notes; with further time in bottle, these will evolve into more mature, nutty, and honeyed aromas, adding extra layers of complexity.
Production
The grapes for Château Astruc Teramas Chardonnay come from a special, high-lying vineyard in the Limoux appellation, where cool breezes from both the Mediterranean and the Atlantic meet at the foothills of the Pyrenees. The terroir is rich in limestone and gravel, giving excellent drainage and imparting a distinct mineral character and tension to the wine. The proximity to the sea keeps the vines in excellent health, reducing the need for chemical intervention and allowing for a more natural approach in the vineyard. Grapes are harvested by hand at optimal ripeness, then gently pressed in a Bucher press to preserve purity and finesse. Fermentation takes place slowly at low temperatures in oak barrels, promoting aromatic complexity and textural depth. Around 60% of the wine undergoes malolactic fermentation to soften acidity and add creaminess, while 9 months of aging in oak (one-third new, two-thirds two-year-old barrels; half French, half American oak) builds structure and nuance without overwhelming the fruit.
Food & Serving
This Limoux Chardonnay is a superb match for rich, refined dishes where texture and flavor intensity can stand up to its body and oak influence. Think creamy seafood risotto with shellfish, lobster or crayfish, veal sweetbreads, or poultry in a cream-based sauce. With a bit of bottle age, it pairs beautifully with mushroom cream soup, roasted chicken with truffle-infused purée, or classic dishes like sole or tongue Meunière in brown butter. Serve well-chilled but not too cold, ideally at 10–12 °C, to allow the aromatics and texture to fully express themselves. A short decant of 20–30 minutes, or simply opening the bottle in advance and using a generous glass, can help the wine unfurl its more complex, buttery and floral notes.
