Le Carillon de l'Angélus hails from the slopes and foot of the southern-facing hillside of Saint-Émilion, where clay-limestone and sandy-clay soils give both richness and lift to the fruit. The blend typically centers on Merlot, complemented by Cabernet Franc and a touch of Cabernet Sauvignon, reflecting the estate’s classic Right Bank profile. Grapes are harvested parcel by parcel at optimal ripeness, often picked by hand to ensure careful selection. In the cellar, vinification takes place in temperature-controlled vats, with gentle extraction to preserve purity of fruit and fine tannins. The wine is then aged in French oak barrels (a portion of which are new), allowing the oak to support—not dominate—the wine’s aromatic complexity and textural elegance.
