Tasting Notes
In the glass, this Cabernet Sauvignon presents a deep, opaque ruby-purple hue, signaling both concentration and youth. The nose unfolds in layers: blackcurrant, ripe blackberry, and plum are interwoven with notes of graphite, cedar, and warm baking spices, alongside hints of violets, tobacco leaf, and a subtle cocoa powder edge.
On the palate, the wine is full-bodied yet finely structured, with a core of dark berry fruit framed by firm, polished tannins. Flavors of cassis, black cherry, and mulberry are lifted by notes of pencil shavings, espresso, and a touch of crushed herbs, giving definition and freshness. Production
Sourced from the estate’s Cathiard Vineyard in Napa Valley, this Cabernet reflects a classic Rutherford terroir: well-drained gravelly and alluvial soils, abundant sunshine, and cool evening breezes that preserve freshness and aromatics. Grapes are typically harvested by hand in small lots at optimal ripeness, allowing for meticulous selection of only the finest clusters. In the cellar, the fruit is gently destemmed and fermented in temperature-controlled vessels to capture purity of fruit and fine tannin texture, followed by an extended maceration to build structure. The wine is then aged in French oak barrels—often with a significant proportion of new oak—to add complexity, depth, and subtle spice, all while respecting the integrity of the Cabernet fruit and the character of the vineyard.

This Cabernet Sauvignon is a natural partner for richly flavored dishes: think grilled ribeye with rosemary, braised short ribs, lamb chops with herb crust, or a classic filet mignon with mushroom jus. It also complements aged hard cheeses such as Comté, Cheddar, or Parmigiano-Reggiano. For optimal enjoyment, serve at 16–18°C (60–65°F). Young bottles will benefit from 60–90 minutes in a decanter to allow the aromatics to unfurl and the tannins to soften; older bottles may require a gentler, shorter decant to remove any sediment while preserving delicate tertiary notes.
