Grapes are typically harvested by hand in small lots at optimal ripeness, allowing for meticulous selection of only the finest clusters. In the cellar, the fruit is gently destemmed and fermented in temperature-controlled vessels to capture purity of fruit and fine tannin texture, followed by an extended maceration to build structure. The wine is then aged in French oak barrels—often with a significant proportion of new oak—to add complexity, depth, and subtle spice, all while respecting the integrity of the Cabernet fruit and the character of the vineyard.
