Tasting Notes
In the glass, the 2021 Valtuille Vino de Villa shows a vibrant, deep ruby hue with a slight violet rim, hinting at both youth and concentration. The nose is perfumed and precise, with aromas of crushed red berries, black cherries, violets, wild herbs, and a subtle mineral edge, along with gentle hints of pepper and warm earth.
On the palate, it is medium-bodied yet layered, with juicy red and dark fruit, fine-grained tannins, and a lively, mouthwatering acidity that keeps everything bright and lifted. Notes of raspberry, cherry, and plum are wrapped in savory touches of graphite, dried flowers, and a whisper of spice from its time in large, neutral oak. The finish is long, fresh, and slightly saline, speaking clearly of its Atlantic-influenced terroir. Enjoyable now with a short aeration, it has the structure and balance to evolve gracefully over the next 6–8 years.
Production
Castro Ventosa farms primarily old-vine Mencía in and around the village of Valtuille in Bierzo, where the vineyards sit on a mix of sandy, clay, and stony soils over decomposed slate at moderate altitude. The Atlantic influence keeps the climate relatively cool, preserving acidity and aromatic complexity in the grapes. Harvest is carried out by hand, parcel by parcel, to ensure optimal ripeness and careful selection in the vineyard. In keeping with Raúl Pérez’s philosophy, fermentation is typically carried out with indigenous yeasts, often with a proportion of whole clusters to enhance aromatic lift and structure. The wine is then aged in large, mostly neutral oak vats or older barrels, allowing it to develop texture and complexity without overt oak flavor, and bottled with minimal intervention to retain purity and a clear expression of Valtuille’s terroir.
Food & Serving
This Bierzo red is very food-friendly, shining alongside roasted lamb, grilled pork, charcuterie, and dishes with earthy components such as mushrooms or lentils. It also works beautifully with roasted poultry, chorizo, and semi-hard cheeses like Manchego or aged Gouda. Serve at around 15–16°C (slightly cooler than typical room temperature) to highlight its freshness and aromatic detail. A brief decant of 30–45 minutes is recommended in its youth to allow the wine to open up and reveal its floral, mineral complexity.

Castro Ventosa is the historic family estate of the Pérez family in Valtuille de Abajo, in Spain’s Bierzo region, and is closely associated with the visionary winemaker Raúl Pérez. The family has been growing vines in the village for generations, long before Bierzo rose to international prominence. Under Raúl’s influence, Castro Ventosa became one of the key reference points for terroir-driven Mencía, helping to redefine the region’s reputation from rustic country wines to some of Spain’s most compelling, elegant reds.
