Tasting Notes
In the glass, the 2021 El Nido shows an almost opaque, inky purple core with a narrow, vibrant rim—youthful and dense, hinting at its immense concentration. Swirled in the glass, it forms thick, slow‑moving legs that underline its richness and glycerol texture.
The nose is intoxicating and layered: ripe blackcurrant and blackberry compote, crème de cassis, and dark plum are wrapped in notes of cocoa, espresso, vanilla bean, and sweet baking spices from the extended oak aging. With more air, nuances of licorice, graphite, dried Mediterranean herbs, and a touch of smoked meat and cedar emerge, giving the wine both depth and complexity.
On the palate, this is a full‑bodied, powerful red with a velvety, almost opulent mouthfeel. Dark fruits—black cherry, blueberry, and blackcurrant—are front and center, framed by fine‑grained but assertive tannins and a spine of well‑judged acidity that keeps the wine from feeling heavy. It will drink impressively in its youth after proper decanting, but will truly hit its stride over the next 10–20 years, developing more savory complexity, tertiary notes of leather, truffle, and cigar box, and an even silkier texture.
Production
El Nido is sourced from select plots in Jumilla, a sun‑drenched region in southeastern Spain known for its old‑vine Monastrell rooted in poor, stony soils. The combination of high luminosity, low rainfall, and well‑drained calcareous and rocky terroir naturally limits yields and concentrates flavor in the grapes, particularly important for both the native Monastrell and the Cabernet Sauvignon. Harvesting is done by hand, allowing rigorous selection of only perfectly ripe bunches in the vineyard and again upon arrival at the bodega. The wine is vinified in stainless steel tanks using neutral yeasts to preserve the purity and intensity of the fruit, followed by a long maceration to extract deep color, tannin, and aromatic complexity. After fermentation, the blend of 70% Cabernet Sauvignon and 30% Monastrell is aged for approximately 23 months in a combination of French and American oak barrels, many of them new, which imparts its distinctive, luxurious oak profile while carefully integrating with the concentrated fruit and robust structure.

The 2021 El Nido is a natural partner for rich, flavorful dishes that can match its power and intensity. Think prime ribeye or tomahawk steaks, slow‑braised lamb shanks, venison or other game, oxtail stew, or short ribs in red wine reduction. It also pairs beautifully with hearty Mediterranean cuisine—roast lamb with rosemary and garlic, charred chorizo, or grilled ibérico pork—as well as aged hard cheeses like Manchego, Parmigiano Reggiano, or a mature Comté. Serve at 16–18°C (60–64°F) to let the aromatics fully express themselves without the alcohol feeling too prominent. Given the concentration and youth of this vintage, generous aeration is essential: in Jeroboam format, decant at least 2–3 hours before serving, or even longer for maximum expression.
