Crafted in tiny quantities, it captures Malbec at its most refined and mineral, more akin to a grand cru than a typical New World red. Named after the beneficial native soil microorganisms (“Mundus Bacillus Terrae” roughly translates to “world of soil microbes”), this wine highlights the profound connection between living soils and pure, elegant fruit.

Tasting Notes
In the glass, the 2021 Mundus Bacillus Terrae shows an intense yet shimmering deep ruby color with violet highlights at the rim, signaling both concentration and freshness. The nose is layered and complex: wild blackberries and blueberries interlace with black cherry, crushed violets, and graphite, over tones of thyme, wet limestone, and finely ground pepper. Subtle hints of cocoa nibs, tobacco leaf, and earthy truffle emerge with air, showcasing its cool‑climate, high‑altitude pedigree. On the palate, this is a poised, vertical expression of Malbec—powerful yet lifted. Precise black and red fruits are framed by vibrant acidity and ultra‑fine, chalky tannins that echo the limestone soils of Gualtallary. Flavors of blackberry, plum skin, and macerated raspberry mingle with notes of licorice, savory herbs, flint, and a touch of smoked tea. The finish is long, saline, and mouthwatering, with a lingering mineral tension. Sourced from select parcels of the famed Adrianna Vineyard in Gualtallary, Tupungato (Uco Valley), this wine reflects an extreme high‑altitude terroir at around 1,450 meters above sea level. The soils are poor, rocky, and rich in calcium carbonate with veins of limestone, fostering low yields, thick‑skinned grapes, and naturally high acidity. The vines are carefully tended and hand‑harvested in small boxes to preserve berry integrity. In the winery, fruit is sorted meticulously, then fermented in small containers—often with a proportion of whole berries or whole clusters depending on the vintage—to enhance aromatic lift and structure. Fermentations are typically driven by native yeasts, emphasizing a sense of place, and the wine is aged in mostly used French oak barrels to add texture and complexity without overwhelming the purity of fruit and the distinctive mineral character.

Mundus Bacillus Terrae is a gastronomic Malbec that shines with refined, savory dishes.
