Tasting Notes
In the glass, the 2021 Caro shows a deep, vibrant ruby to garnet hue with an almost inky core, hinting at its concentration and intensity. The nose is layered and expressive: ripe blackberries, dark cherries, and plums are woven with notes of violet, graphite, cedar, and a touch of tobacco and spice from its French oak aging. On the palate, this is a full-bodied yet refined wine, with Malbec bringing plush, juicy dark fruit and floral lift, while Cabernet Sauvignon contributes structure, freshness, and savory complexity. Expect flavors of cassis, black plum, cocoa, and sweet baking spices, supported by fine-grained tannins and a well-judged acidity that keeps everything in balance. The 18 months in predominantly new French oak add polish, subtle toast, and a long, persistent finish. While already approachable in its youth with a short decant, this vintage has the concentration and structure to evolve beautifully over the next 8–12 years, gaining further nuance and secondary notes.

Production
Sourced from some of Mendoza’s finest high-altitude terroirs in the foothills of the Andes, the 2021 Caro reflects a climate of intense sunlight, cool nights, and poor, well-drained soils that naturally limit yields and enhance flavor concentration. The blend is dominated by Malbec (79%) with Cabernet Sauvignon (21%), expressing both Argentine typicity and Bordeaux-inspired balance. Grapes are carefully handpicked, then destemmed upon arrival at the winery. Fermentation takes place in temperature-controlled stainless steel tanks, where gentle pumping-over is carried out to extract color, tannin, and aromatic compounds without harshness. Malolactic fermentation occurs naturally in tank before the wine is transferred to French oak barriques from Tonnellerie des Domaines in Pauillac, with around 80% new oak, for an 18-month maturation that lends structure, elegance, and refined oak complexity.

This sophisticated Mendoza red is a natural match for richly flavored dishes: think grilled ribeye, lamb chops with rosemary, slow-braised short ribs, or Argentine asado. It also pairs beautifully with game birds, mushroom-based dishes, and hard cheeses such as aged Manchego or Comté. Serve at 16–18°C (60–64°F) to highlight its freshness and aromatic detail. Decant for 45–60 minutes in its youth to allow the tannins to soften and the bouquet to fully open; older bottles will benefit from a gentler, shorter decant primarily to remove any sediment.
