2021 Bodega Numanthia Termes is a vibrant, modern expression of Toro, crafted from old-vine Tinta de Toro (the local clone of Tempranillo) grown on high, windswept plateaus in northwestern Spain. It offers a more approachable, juicy style than Numanthia’s flagship wines, while still carrying the depth and character that have made the estate a reference point for the region. This cuvée showcases the energy and spice of Toro in a refined, contemporary red that’s as versatile at the table as it is expressive in the glass.

Tasting Notes
In the glass, the 2021 Termes shows a deep, vivid ruby color with purple highlights at the rim, signaling both youth and concentration. The nose opens with ripe red and black fruits—think black cherry, red plum and wild berries—layered with notes of violets, sweet spice, licorice, and a touch of graphite and cocoa from careful oak aging. On the palate, Termes is medium to full-bodied, with polished tannins and a core of succulent fruit that keeps the wine refreshing rather than heavy. Flavors of juicy dark cherry, blackberry and red currant mingle with nuances of pepper, dried herbs, and a subtle toasted note. The acidity is bright for a Toro red, giving lift and definition to the finish, which is long, spicy and clean. While delicious in its youth for its fruit and vibrancy, this vintage should evolve gracefully over the next 5–8 years, gaining complexity and softening further with a bit of bottle age.

Production
The vineyards for Termes are located in the Toro appellation of Castilla y León, where old bush vines of Tinta de Toro grow on poor, sandy and stony soils over clay subsoils at relatively high altitude. This combination of intense sun, large diurnal temperature swings, and low fertility naturally reduces yields and concentrates flavor in the grapes. Harvest is typically done by hand, allowing for careful selection of bunches both in the vineyard and at the winery. The grapes are destemmed and fermented in temperature-controlled stainless-steel tanks to preserve fresh fruit character, with gentle extraction to maintain balance and finesse. After fermentation, Termes is aged in a mix of French oak barrels (often used and some new) for several months, adding structure and aromatic complexity without overwhelming the natural vibrancy of the fruit.

Food & Serving
Termes’ generous fruit and polished structure make it a highly adaptable food wine. It’s a natural match for grilled or roasted meats—lamb chops, beef sirloin, Iberian pork, or herb-rubbed chicken—as well as hearty stews, chorizo dishes, and chargrilled vegetables. It also pairs beautifully with hard cheeses such as Manchego and aged Gouda, or tapas-style spreads featuring cured meats and robust flavors. Serve at around 16–18°C (61–64°F) to highlight both freshness and depth. A brief decant of 30 minutes can help the wine open up aromatically, particularly in its first few years, but it will also show well simply opened and poured over the course of a meal.

Bodegas Numanthia was founded in the late 1990s with a clear mission: to champion the old vines and powerful character of Toro, a region long known in Spain for robust reds but relatively undiscovered internationally. Situated near the town of Valdefinjas, the estate works with some of the oldest ungrafted Tinta de Toro vines in the country, many over 50 years old and some exceeding a century. Numanthia’s wines quickly drew global attention for their intensity, precision and age-worthiness, helping to put Toro on the world wine map. Today, the winery is recognized as one of the benchmark producers of the region, with Termes serving as its most accessible introduction to the house style—capturing Toro’s bold personality in a more fruit-forward, drink-now expression while still reflecting the estate’s exacting standards in the vineyard and cellar.
