2021 Bimbache Tinto is a captivating, low‑intervention red from the tiny Atlantic island of El Hierro, the westernmost and smallest of Spain’s Canary Islands. Crafted in microscopic quantities from near-forgotten indigenous grapes, it delivers a pure, unmistakably volcanic expression of place. This cuvée stands out for its lightness, aromatic complexity and saline, mineral backbone that could only come from windswept vines on young volcanic soils.
Tasting Notes
In the glass, 2021 Bimbache Tinto shows a very clear, pale to medium ruby hue, almost translucent, with a brightness that hints at its fresh, agile character. The nose is immediately distinctive and evocative: potpourri and dried rose petals mingle with notes of lava stone, pumice, crushed rock and a fine, salty-mineral edge. Subtle red berries and wild herbs weave through the background, lending lift and finesse rather than overt fruitiness.
On the palate, this is an elegant, medium‑light bodied wine with vibrant acidity and fine, filigreed tannins. Red currant, wild strawberry and cranberry are wrapped in savory, almost smoky volcanic tones, giving a long, linear and deeply “Atlantic” finish. The texture is precise rather than plush, with a firm spine and a lingering, stony aftertaste that feels both delicate and intense. Enjoy it now for its energy and perfume, or over the next 3–6 years if well cellared, to allow the mineral and floral elements to gain even more nuance.
Production
Bimbache Tinto is sourced from organically farmed vineyards on the warmer, south-facing slopes of El Hierro, where red varieties can fully ripen despite the island’s rugged, windswept conditions. The vines grow in extremely limited pockets of volcanic soils—lava rock and pumice—that force roots deep into the ground and naturally restrict yields. Grapes (a blend of Listán Negro, Listán Prieto and Verijadiego Tinto) are hand-harvested, carefully destemmed and then macerated for around two weeks in stainless steel tanks. Fermentation proceeds with indigenous yeasts and without temperature control, allowing nature to guide the process. After fermentation, the wine rests for nearly a year in the same tanks, and is bottled unfiltered and unfined, with only a small addition of sulfur at bottling. Total production is tiny—around 500 bottles of this cuvée—making it a rare snapshot of El Hierro’s unique terroir.
Food & Serving
The lifted acidity and fine tannins of 2021 Bimbache Tinto make it a versatile partner at the table. It pairs beautifully with simply grilled fish or octopus, especially when prepared over charcoal, as well as roasted poultry, rabbit, charcuterie, and dishes featuring roasted vegetables, mushrooms or mild goat’s cheese. Think of it as a Canary Islands counterpart to lighter, volcanic-influenced reds from Mount Etna or the Loire. Serve slightly chilled, around 14–16°C (57–61°F), to highlight its aromatic freshness and mineral character. Decanting is recommended when the wine is young—30–45 minutes will help it open up and fully reveal its floral and volcanic complexity.

Bimbache is one of the most compelling and imaginative wine projects to emerge from Spain in recent years, named in homage to the original inhabitants of El Hierro, who were enslaved and displaced after the Spanish conquest in the early 15th century. The project is driven by Rayco Fernández, a Canary Islands wine expert and distributor (also known for Puro Rofe on Lanzarote), whose deep knowledge of the archipelago’s vineyards led him to rescue and champion El Hierro’s almost-forgotten plots. On an island where many vineyards have been abandoned and only a handful of growers persist, Bimbache has become a reference point for authentic, Atlantic-influenced wines that preserve local varieties and traditions. With total production measured in just a few thousand bottles, Bimbache’s wines are highly sought after by enthusiasts of volcanic, terroir-driven, natural-leaning wines from the very edge of Europe.
