The 2021 Bibi Graetz Scopeto Bianco is a vibrant Tuscan white that captures the wild, maritime character of Italy’s Tyrrhenian coast. Crafted from Ansonica (also known as Inzolia/Insolia) grown on the rugged island of Isola del Giglio, it offers a compelling mix of salinity, minerality and ripe orchard fruit. This is a distinctive, small‑production white from one of Tuscany’s most charismatic and cult‑followed winemakers, better known for his iconic reds like Colore and Testamatta but equally gifted with native white varieties.
Tasting Notes
In the glass, Scopeto Bianco shows a pale, luminous straw-yellow color with greenish reflections, hinting at its freshness and coastal origin. The nose opens with delicate white flowers and fennel, followed by notes of ripe pear, lime zest and a pronounced sea-breeze salinity. Subtle hints of Mediterranean herbs and crushed stone add complexity as it aerates.
On the palate, the wine is brisk, precise and refreshing, with a solid, almost textural backbone that balances its zesty acidity. Flavors of pear, lemon-lime, and green apple are layered over a distinct mineral core, giving the wine both energy and depth. The saline edge, clearly influenced by the island terroir, carries through to a clean, savory, lingering finish. Production
The Ansonica grapes for Scopeto Bianco come from vineyards on Isola del Giglio, an island off the Tuscan coast where poor, granite-rich soils and constant sea breezes define the terroir. Vines struggle in this low-fertility, rocky environment, naturally limiting yields and concentrating flavor. The coastal climate, moderated by the Tyrrhenian Sea, brings warm days, cool nights and steady winds that help maintain acidity and healthy fruit. Grapes are harvested by hand to ensure careful selection, then destemmed and very gently pressed, with the use of dry ice to protect the must from oxidation and preserve delicate aromatics. Fermentation takes place at very low temperatures in stainless steel tanks to retain freshness, purity of fruit and the wine’s natural saline edge. After blending, the wine continues to mature on its fine lees in stainless steel, building texture and complexity without the influence of oak.
Food & Serving
This Tuscan island white is an excellent partner for seafood and creamy coastal dishes. Pair it with tagliatelle in a light cream sauce with prawns (as the winery suggests), linguine alle vongole, grilled prawns, seared scallops, or simply prepared white fish with lemon and herbs. It also works beautifully with fritto misto, octopus salad, mild goat cheeses and vegetable-based dishes with fennel, zucchini or artichokes. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and saline verve. Decanting is not necessary, but giving the wine a few minutes in the glass to warm slightly and open up will reveal more floral, herbal and mineral nuances.

Bibi Graetz founded his eponymous estate in 2000, quickly rising from outsider to cult figure in Tuscany’s quality wine revolution. Working primarily with old-vine indigenous varieties and an artist’s sensibility (he designs his own striking labels), Graetz has built an international following for characterful, expressive wines that sit slightly outside the traditional Tuscan framework.
