First released in 1940, Georges de Latour Private Reserve has long been considered a reference point for classic Napa Cabernet and remains a fixture in serious cellars worldwide.

Tasting Notes
In the glass, the 2021 Georges de Latour shows a deep, opaque ruby to purple hue, with vibrant, youthful rims that hint at its long life ahead. The nose is layered and complex, offering concentrated aromas of cassis, ripe black cherry, and blackberry compote, intertwined with notes of cedar, graphite, dark chocolate, espresso, and sweet baking spices from premium oak. Subtler tones of violet, dried herbs, and pencil shavings emerge with time in the glass, underscoring its pedigree. On the palate, this is full-bodied and powerful, yet remarkably composed, with a core of dense black fruit wrapped in fine-grained, persistent tannins. The structure is firm but polished, supported by fresh acidity that keeps the wine lively and focused. Flavors of blackcurrant, plum, and boysenberry are woven with mocha, tobacco leaf, and savory spice, leading to a very long, precise finish. While already impressive in its youth, the 2021 vintage clearly has significant aging potential; with proper cellaring, it should evolve gracefully for 15–25 years, gaining further depth, nuance, and tertiary complexity.

Fruit for Georges de Latour Private Reserve is sourced primarily from Beaulieu Vineyard’s historic Rutherford estate, an area celebrated for its well‑drained alluvial soils and the signature "Rutherford dust" character that lends Cabernet its distinctive tannin profile. The warm, sunny Napa Valley climate ensures optimal ripeness, while cool nights preserve freshness and aromatics. Grapes are typically hand-harvested at optimal maturity, sorted meticulously to ensure only pristine clusters are used, and often picked block by block to capture vineyard nuances. In the cellar, the wine is vinified with great precision—small-lot fermentations, careful temperature control, and extended maceration to extract color, flavor, and structure without harshness. The blend is centered on Cabernet Sauvignon with a small proportion of complementary Bordeaux varieties (such as Petit Verdot and/or Merlot, depending on the vintage), then aged in a high percentage of new French oak barrels to build complexity, texture, and age‑worthy structure.

Food & Serving
This is a commanding red best suited to richly flavored, protein‑driven dishes. Classic pairings include dry‑aged ribeye, grilled lamb chops with rosemary, beef tenderloin with red wine reduction, or braised short ribs. It also works beautifully with game meats, truffle dishes, and aged hard cheeses such as Comté, Parmigiano-Reggiano, or aged Gouda. Serve at 16–18°C (60–64°F) to highlight both fruit and structure. For young vintages like 2021, decanting for 1.5–3 hours is strongly recommended to soften the tannins and allow the aromatics to unfold; older bottles may require a gentler, shorter decant mainly to separate from sediment.
