Grapes are typically hand-harvested in small crates in the cool of the morning to preserve aromatic purity and acidity, with each variety and parcel picked at optimal ripeness. In the cellar, the lots are vinified separately, often with gentle whole-bunch pressing and a combination of natural and carefully selected yeasts. Fermentation and maturation most often take place in a mix of stainless steel and seasoned oak, with extended time on fine lees to build texture and complexity while keeping the oak influence understated. The final blend is assembled after meticulous tasting to achieve balance between freshness, aromatics, and structure.
